I love making this Coconut Cloud Cake whenever I want a dessert that feels light, elegant, and full of tropical flavor. The soft coconut-infused cake layers pair beautifully with a creamy whipped cream cheese frosting, while the shredded coconut creates a snowy finish that looks just as impressive as it tastes. Ingredients

2 ½ cups all-purpose flour

2 ½ teaspoons baking powder

½ teaspoon salt

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs, room temperature

1 cup coconut milk

1 ½ cups heavy whipping cream

8 ounces cream cheese, softened

½ cup powdered sugar

Directions

I preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans before lining them with parchment paper.

I whisk together the flour, baking powder, and salt in a medium bowl.

In a large mixing bowl, I beat the butter and granulated sugar until the mixture becomes light and fluffy.

I add the eggs one at a time, beating well after each addition.

I stir in the vanilla extract and coconut extract.

I alternate adding the dry ingredients and coconut milk, beginning and ending with the dry ingredients, mixing only until everything is combined.

I divide the batter evenly between the prepared cake pans and smooth the tops.
