This Creamy Roasted Garlic Scape White Bean Dip is one of my favorite ways to turn fresh garlic scapes into a smooth, savory appetizer. I roast the scapes first to soften their flavor, then blend them with creamy cannellini beans, olive oil, fresh lemon juice, and basil. The result is a rich yet fresh-tasting dip that I can serve with vegetables, crackers, crostini, or pita bread.

I also like using this dip as a sandwich or wrap spread. It takes only about 20 minutes from start to finish, making it an easy option when I want something homemade without spending much time in the kitchen.

Creamy Roasted Garlic Scape White Bean Dip

Ingredients

1 can (15 oz) cannellini beans, drained and rinsed

7 garlic scapes

6 tablespoons olive oil, divided

2 tablespoons lemon juice

½ teaspoon salt

⅛ teaspoon black pepper

2 tablespoons fresh basil, chopped

Extra olive oil for serving, optional

Directions

I preheat the oven to 350°F (175°C).

I toss the garlic scapes with 1 tablespoon of olive oil, then arrange them on a baking tray.

I roast the garlic scapes for 7–10 minutes, or until they become tender. I let them cool slightly before trimming and roughly chopping them.

I add the drained cannellini beans, roasted garlic scapes, remaining olive oil, lemon juice, salt, and black pepper to a food processor.

I blend everything until the mixture becomes very smooth and creamy, stopping occasionally to scrape down the sides of the food processor.

I add the chopped fresh basil and pulse a few times, just until the basil is evenly distributed throughout the dip.

I transfer the dip to a serving bowl and, if desired, finish it with a small drizzle of olive oil.

I serve it with fresh vegetables, crostini, crackers, or pita bread. I also like spreading it onto sandwiches and wraps.

Variations
