Cheesecake Cups

These cheesecake cups are one of my favorite ways to enjoy classic cheesecake in a simple, individually portioned dessert. I make them with a buttery graham cracker crust and a smooth cream cheese filling flavored with vanilla and a touch of lemon juice. After chilling, I like to finish each cup with whipped cream and fresh berries for a pretty, refreshing topping.

Because they are baked in cupcake liners, I find these mini cheesecakes much easier to serve than a full-size cheesecake. I can prepare them ahead of time, keep them refrigerated, and bring them out whenever I need an easy dessert for a party, holiday, family gathering, or simple treat at home.

I like to let the cream cheese soften before I begin because room-temperature cream cheese blends much more easily into a silky filling. I also use sour cream to give the cheesecake a smooth, creamy texture and a subtle tang that balances the sweetness.

Directions

I preheat my oven to 325°F (160°C) and line a muffin tin with cupcake liners.

I combine the graham cracker crumbs and melted butter until the crumbs are evenly moistened. I divide the mixture between the cupcake liners and press it firmly into the bottom of each one to create the crust.

In a large mixing bowl, I beat the softened cream cheese with the granulated sugar until the mixture is smooth and creamy. I scrape down the sides of the bowl as needed so there are no noticeable lumps.

I add the eggs one at a time, mixing after each addition just until incorporated.

I stir in the vanilla extract, sour cream, lemon juice, and a pinch of salt until the filling is smooth and evenly combined.

I spoon the cheesecake filling over the prepared crusts, filling each liner about three-quarters full.

I bake the cheesecake cups for 18–22 minutes. I know they are ready when the edges look set but the centers still have a slight jiggle.

I let the cheesecake cups cool completely before transferring them to the refrigerator. I chill them for at least 3 hours so the filling can become firm, creamy, and easy to serve.

Before serving, I top the chilled cheesecake cups with whipped cream and fresh berries if desired.

I keep in mind that most of the total time is hands-off chilling time. I prefer giving the cheesecake cups the full three hours in the refrigerator because the texture becomes noticeably better once they are thoroughly chilled.

Variations

I sometimes replace the graham cracker crumbs with crushed chocolate cookies for a chocolate-cookie crust. For an extra chocolatey version, I can also add a little melted chocolate to the cheesecake filling or finish the cups with chocolate sauce.

For a fruitier dessert, I like topping the cups with strawberries, raspberries, blueberries, or a spoonful of fruit compote. Lemon zest added to the filling is another easy variation when I want a brighter citrus flavor.

When I want a caramel version, I drizzle caramel sauce over the chilled cheesecakes and add a tiny pinch of flaky salt. I can also use crushed cookies, chopped nuts, or fruit sauce as toppings to make several different varieties from the same batch.

Storage/Reheating

I store leftover cheesecake cups in an airtight container in the refrigerator for up to 4–5 days. If I have already added whipped cream or fresh berries, I prefer eating them sooner because the toppings can soften or release moisture during storage.

For longer storage, I can freeze the plain cheesecake cups without whipped cream or fresh fruit. I wrap them well and place them in a freezer-safe container, then freeze them for up to 1–2 months. I thaw them overnight in the refrigerator before serving.

I don't reheat these cheesecake cups because I think their texture and flavor are best when served chilled. After refrigeration, I can let them sit at room temperature for around 10–15 minutes before serving if I prefer a slightly softer texture.

How do I know when cheesecake cups are finished baking?

I look for edges that appear set with centers that still jiggle slightly when I gently move the pan. I avoid waiting until the centers are completely firm because the cheesecakes continue to set as they cool and chill.
