Crispy on the outside and tender on the inside, these air fryer sliced potatoes are the perfect combination of textures. Whether as a snack or a side dish, they come together in no time and are so easy to make! Plus, they're customizable, so I can season them just the way I like or add a sprinkle of Parmesan for that extra flavor boost.

Air Fryer Sliced Potatoes

Ingredients

2 medium russet or Yukon gold potatoes

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon garlic powder

½ teaspoon paprika or Italian seasoning (optional)

Optional: grated Parmesan, fresh herbs, or dipping sauces

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

Directions

Wash and thinly slice the potatoes, about ⅛" thick. I like using a mandoline to get even slices.

Soak the slices in cold water for 15–30 minutes to remove excess starch. This helps them get crispier. Once they’ve soaked, I drain and pat them dry thoroughly with paper towels.

Toss the potato slices in a bowl with olive oil and the seasonings (salt, garlic powder, and paprika/Italian seasoning). I make sure all slices are coated evenly.

Preheat the air fryer to 375°F (190°C).

Arrange the slices in a single layer in the air fryer basket. I usually have to do 2–3 batches, depending on the size of my air fryer.

Air fry for 10–15 minutes, flipping the slices halfway through. I like to adjust the time depending on the thickness of the slices—thicker slices may need a bit more time to get crispy.

Serve hot with a sprinkle of grated Parmesan, fresh herbs, or some of my favorite dipping sauces!

Servings and Timing

Prep Time: 10 minutes (+ soak time)

Cooking Time: 15 minutes

Total Time: ~40 minutes

Servings: 2–3 servings

Variations

Seasonings: I love experimenting with different seasonings. I can use Italian seasoning, smoked paprika, or even a touch of cayenne for a little heat. Feel free to get creative with the spices!

Cheese: Adding grated Parmesan at the end is always a winning move, but I can also use cheddar or mozzarella for a cheesy twist.

Herbs: Fresh herbs like rosemary or thyme complement these crispy potatoes beautifully. I’ll sprinkle them over the top after air frying for added flavor.

Dips: These potatoes are amazing on their own, but adding a dipping sauce like sour cream, ranch, or even ketchup takes them to the next level.

Storage/Reheating

If I happen to have leftovers, I store them in an airtight container in the refrigerator for up to 2-3 days. When I want to reheat them, I pop them back in the air fryer for a few minutes at 350°F (175°C) to get them crispy again. I love how the air fryer brings them back to life, just like when they were first made.

FAQs

How do I get my air fryer sliced potatoes extra crispy?

To get that perfect crisp, I make sure to soak the potato slices in cold water for 15–30 minutes before cooking. This removes excess starch and makes the potatoes crispier when air fried.

Can I use sweet potatoes for this recipe?

Yes! Sweet potatoes work wonderfully in this recipe. Just keep in mind that they might cook a little faster, so I’ll need to check them earlier.

How do I prevent the slices from sticking together in the air fryer?

I make sure to lay the slices out in a single layer in the air fryer basket. If necessary, I cook in batches to avoid overcrowding. This helps the hot air circulate evenly and prevents the slices from sticking together.

Can I make this recipe without oil?

Yes, I can make these potatoes oil-free if I prefer. The texture may be slightly different, but they will still be crispy. Alternatively, I can use a spray oil to coat the potatoes lightly.

Can I freeze the sliced potatoes before cooking them?

I can freeze the potato slices before cooking! After soaking and drying them, I lay them flat on a baking sheet to freeze. Once frozen, I transfer them to a zip-top bag. When I’m ready to cook, I don’t need to thaw them—just air fry them straight from frozen!

Conclusion

These air fryer sliced potatoes are an absolute game-changer. They’re simple to make, deliciously crispy, and I can customize them to my liking with different seasonings and toppings. Whether I’m making them as a snack or a side dish, they’re sure to be a hit every time! I love that they’re so quick and easy to prepare, and they make for a healthier alternative to deep-fried potato chips.
