Description

A fresh and satisfying avocado toast topped with juicy tomatoes, bright lime juice, and fragrant cilantro, layered over crispy toasted bread for a wholesome and flavorful meal.


Ingredients

2 slices good-quality bread (sourdough, whole grain, or preferred choice)

1 ripe avocado

1 small lime or 1/2 lemon, juiced

Salt, to taste

Black pepper, to taste

1/2 cup cherry tomatoes or 1 medium tomato, diced

2 tablespoons red onion, finely chopped (optional)

2 tablespoons fresh cilantro, chopped

1 teaspoon olive oil, optional

Crushed red pepper flakes, optional


Instructions

  1. Toast the slices of bread to your preferred level of crispiness.
  2. Scoop the avocado flesh into a small bowl. Add lime or lemon juice, salt, and black pepper. Mash with a fork until smooth or slightly chunky, according to preference.
  3. In a separate bowl, combine diced tomatoes, chopped cilantro, red onion (if using), a pinch of salt, and a drizzle of olive oil. Mix gently.
  4. Spread the mashed avocado evenly over each slice of toasted bread.
  5. Spoon the tomato-cilantro mixture generously on top. Finish with extra black pepper, red pepper flakes, or an additional squeeze of lime juice if desired. Serve immediately.

Notes

For extra protein, top with a poached or fried egg.

Add crumbled feta or queso fresco for additional creaminess (not vegan).

Sprinkle everything bagel seasoning for enhanced flavor.

To prevent browning, press plastic wrap directly onto the surface of mashed avocado before refrigerating.

Store avocado and tomato topping separately for up to 24 hours in the refrigerator.
