Description

This creamy baked yogurt has a light, custard-like texture with juicy berries in every bite, making it a wholesome breakfast, snack, or light dessert. It's easy to prepare, naturally sweetened, and perfect for meal prep.


Ingredients

2 cups Greek yogurt

4 large eggs

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

3 tablespoons cornstarch

1 1/2 cups berries, divided


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Whisk together the Greek yogurt, eggs, maple syrup or honey, and vanilla extract until smooth.
  3. Add the cornstarch and whisk until fully incorporated.
  4. Gently fold in 1 cup of the berries.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Scatter the remaining 1/2 cup of berries over the top.
  7. Bake for about 45 minutes, or until the center is fully set and no longer jiggles.
  8. Allow the baked yogurt to cool almost completely before slicing into 9 squares and serving.

Notes

Use blueberries, raspberries, strawberries, blackberries, or mixed berries.

Add lemon zest or a pinch of cinnamon for extra flavor.

Mini chocolate chips, chopped nuts, or granola make great additions or toppings.

Store in an airtight container in the refrigerator for up to 5 days.

Freeze individual portions for up to 2 months and thaw overnight in the refrigerator.

Reheat individual servings in the microwave for 15–20 seconds if desired.
