This creamy baked yogurt has a light, custard-like texture with juicy berries in every bite, making it a wholesome breakfast, snack, or light dessert. It's easy to prepare, naturally sweetened, and perfect for meal prep.
Ingredients
2 cups Greek yogurt
4 large eggs
1/4 cup maple syrup or honey
1 teaspoon vanilla extract
3 tablespoons cornstarch
1 1/2 cups berries, divided
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Whisk together the Greek yogurt, eggs, maple syrup or honey, and vanilla extract until smooth.
- Add the cornstarch and whisk until fully incorporated.
- Gently fold in 1 cup of the berries.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Scatter the remaining 1/2 cup of berries over the top.
- Bake for about 45 minutes, or until the center is fully set and no longer jiggles.
- Allow the baked yogurt to cool almost completely before slicing into 9 squares and serving.
Notes
Use blueberries, raspberries, strawberries, blackberries, or mixed berries.
Add lemon zest or a pinch of cinnamon for extra flavor.
Mini chocolate chips, chopped nuts, or granola make great additions or toppings.
Store in an airtight container in the refrigerator for up to 5 days.
Freeze individual portions for up to 2 months and thaw overnight in the refrigerator.
Reheat individual servings in the microwave for 15–20 seconds if desired.
