Description

Juicy baked chicken breasts are coated in a sweet and tangy balsamic glaze, topped with tender roasted cherry tomatoes and melted mozzarella cheese. This easy, comforting dinner is perfect for busy weeknights or family meals.


Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1/4 cup balsamic vinegar

1 tablespoon honey or maple syrup

1 teaspoon dried basil

1 teaspoon dried oregano

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

Fresh basil or parsley, for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Season the chicken breasts on both sides with salt and pepper.
  3. In a small bowl, whisk together the balsamic vinegar, honey or maple syrup, dried basil, dried oregano, and minced garlic.
  4. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the chicken for 2–3 minutes per side until lightly golden.
  5. Transfer the chicken to the prepared baking dish, pour the balsamic mixture over the top, and scatter the cherry tomatoes around the chicken.
  6. Bake uncovered for 20–25 minutes.
  7. Sprinkle the mozzarella evenly over the chicken and return to the oven for 5–10 minutes, until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C).
  8. Garnish with fresh basil or parsley if desired and serve warm.

Notes

Substitute boneless, skinless chicken thighs if preferred, adjusting the cooking time as needed.

Fresh mozzarella or a sprinkle of Parmesan can be used for extra flavor.

Add sliced zucchini, mushrooms, or spinach for additional vegetables.

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months.

Reheat in a 350°F (175°C) oven for 10–15 minutes or microwave until heated through.
