Description
Banana Bread Butter Mochi combines the comforting sweetness of ripe banana bread with the rich coconut flavor and irresistibly chewy texture of Hawaiian butter mochi. Golden buttery edges, warm cinnamon, and crunchy walnuts make every square a delicious tropical treat.
Ingredients
2 large ripe bananas, mashed
2 cups glutinous rice flour
¾ cup granulated sugar
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
2 large eggs
1½ cups full-fat coconut milk
½ cup whole milk
6 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
¼ cup light brown sugar
½ cup chopped walnuts
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease an 8-inch square baking pan with butter or nonstick cooking spray. For easier removal, line the pan with parchment paper, leaving an overhang on two sides.
- In a large mixing bowl, whisk together the glutinous rice flour, granulated sugar, baking powder, ground cinnamon, and salt until evenly combined.
- In a separate bowl, whisk the eggs, full-fat coconut milk, whole milk, slightly cooled melted butter, vanilla extract, and light brown sugar. Add the mashed bananas and whisk until well incorporated.
- Gradually pour the wet ingredients into the dry ingredients, whisking continuously until a smooth, pourable batter forms. Make sure no large pockets of dry flour remain. The batter should be thinner than traditional banana bread batter.
- Using a spatula, gently fold half of the chopped walnuts into the batter, distributing them evenly.
- Pour the batter into the prepared 8-inch square baking pan. Sprinkle the remaining chopped walnuts evenly over the surface.
- Bake for 50–60 minutes, until the top is golden brown, the edges are slightly crisp, and the center is set but gently springy to the touch. If the center remains wet, continue baking for another 5–10 minutes and check again.
- Remove the pan from the oven and allow the mochi to cool for at least 30 minutes. This helps the texture become firmer and chewier and makes slicing easier.
- Cut the cooled Banana Bread Butter Mochi into 9 equal squares. Serve at room temperature or slightly warm, optionally accompanied by coffee or tea.
Notes
Use very ripe bananas with plenty of brown spots for the best natural sweetness, moisture, and banana flavor.
Glutinous rice flour, also called sweet rice flour, is essential for the signature chewy texture. Do not substitute regular rice flour or all-purpose flour.
Use full-fat coconut milk for a rich, creamy texture and pronounced coconut flavor.
Allow the melted butter to cool slightly before combining it with the eggs to prevent accidental cooking.
For chocolate chip banana butter mochi, replace the walnuts with ½ cup chocolate chips.
For toasted coconut banana mochi, add ⅓ cup toasted shredded coconut to the batter and optionally sprinkle additional coconut on top.
For a nut-free variation, omit the walnuts entirely.
For cinnamon sugar banana mochi, sprinkle a mixture of cinnamon and sugar over the batter before baking.
For a dairy-free variation, replace the whole milk with unsweetened coconut milk or another dairy-free milk and substitute plant-based butter for the unsalted butter.
For a Hawaiian-inspired variation, replace the walnuts with chopped macadamia nuts.
Allow the mochi to cool for at least 30 minutes before slicing. Cutting while hot may result in an overly sticky texture.
Keep covered at room temperature for no longer than 2 hours before refrigerating leftovers.
Store cooled leftovers in an airtight container in the refrigerator for up to 4 days. Separate squares with parchment paper to prevent sticking.
For longer storage, wrap individual squares tightly and freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
To reheat in the microwave, warm individual squares in 10–15-second intervals until heated through. Avoid overheating.
To reheat in the oven, warm at 300°F (150°C) for approximately 8–10 minutes, until heated through and the edges become slightly crisp.
Serve slightly warm or at room temperature with coffee or tea for a comforting afternoon snack or dessert.
