Description

This easy Banana Pudding Poke Cake combines moist yellow cake soaked with creamy banana pudding, fluffy whipped topping, and crunchy vanilla wafers. A delicious Southern-inspired dessert perfect for potlucks, holidays, and family gatherings.

Ingredients

1 box (15.25 ounces) yellow cake mix

Eggs, oil, and water, as required on the cake mix package

2 packages (3.4 ounces each) instant banana pudding mix

4 cups cold whole milk or 2% milk

1 tub (8 ounces) frozen whipped topping, thawed

20 vanilla wafers, crushed

Instructions

  1. Preheat the oven according to the yellow cake mix package instructions. Prepare a 9x13-inch baking dish.
  2. In a large mixing bowl, combine the yellow cake mix with the eggs, oil, and water specified on the package. Mix until smooth.
  3. Pour the batter into the prepared baking dish and bake according to the package directions, approximately 30 minutes, or until a toothpick inserted into the center comes out clean.
  4. Remove the cake from the oven and allow it to cool for a few minutes. While still warm, use the handle of a wooden spoon to poke evenly spaced holes throughout the cake, reaching down to the bottom.
  5. In a large bowl, whisk together both packages of instant banana pudding mix and 4 cups of cold milk until smooth. Work quickly before the pudding thickens.
  6. Immediately pour the pudding evenly over the warm cake, making sure it fills the holes. Use the back of a spoon to spread the remaining pudding across the surface.
  7. Refrigerate the cake for approximately 2 hours, or until the pudding is completely set and the cake is chilled.
  8. Spread the thawed whipped topping evenly over the chilled cake using a spatula.
  9. Just before serving, sprinkle the crushed vanilla wafers evenly over the whipped topping.
  10. Slice into 12 squares and serve chilled.

Notes

For extra banana flavor, add a layer of thinly sliced fresh bananas between the pudding and whipped topping. Add bananas close to serving time to minimize browning.

Substitute instant vanilla pudding for banana pudding for a milder flavor.

For a chocolate variation, replace the yellow cake mix with chocolate cake mix and garnish with chocolate shavings.

For a banana cream pie variation, add fresh banana slices and extra crushed vanilla wafers between the pudding and whipped topping.

Replace the prepared whipped topping with sweetened homemade whipped cream if desired. Stabilized whipped cream works best for longer storage.

Use instant pudding rather than cook-and-serve pudding, and avoid adding extra milk to prevent a soggy cake.

Add the crushed vanilla wafers immediately before serving to keep them crunchy.

Make ahead by preparing the cake and pudding the night before, then refrigerating overnight. Add the wafers just before serving.

Store leftovers covered in the refrigerator at 40°F (4°C) or below for 3 to 4 days. For the best texture, enjoy within 2 days.

Freeze individual portions tightly wrapped in plastic wrap and stored in freezer-safe containers for up to 1 month. Thaw overnight in the refrigerator. The pudding and topping may change texture after freezing.

Serve chilled directly from the refrigerator. Do not reheat.
