Description

Tender, spice-coated chicken simmered in a rich, creamy coconut curry sauce with fresh basil, ginger, garlic, and jalapeños. Served over warm brown rice, this aromatic dish delivers a delicious balance of savory, gently spicy, and comforting flavors.

Ingredients

1/2 teaspoon ground cumin

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground cardamom

1/2 teaspoon ground black pepper

1/2 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon ground turmeric

1 pound skinless, boneless chicken breasts, cut into 1-inch pieces

2 tablespoons olive oil, divided

3/4 cup chopped onion

5 cloves garlic, minced

2 jalapeño peppers, minced and seeded if desired

1 can (14 ounces) coconut milk

1 teaspoon Worcestershire sauce

1/3 cup fresh basil leaves, chopped, plus more for garnish

1 tablespoon fresh ginger, finely chopped

2–3 cups cooked brown rice

Additional fresh basil leaves for garnish

Instructions

  1. In a small bowl, combine the ground cumin, cinnamon, cloves, cardamom, black pepper, chili powder, salt, and turmeric. Stir until evenly blended.
  2. Place the chicken pieces in a large mixing bowl. Sprinkle the prepared spice mixture over the chicken and toss thoroughly to coat. Allow the seasoned chicken to rest for approximately 30 minutes.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chopped onion and minced jalapeños. Sauté for approximately 3 minutes, stirring occasionally, until the onion begins to soften.
  4. Add the minced garlic and cook for another minute until fragrant. Transfer the cooked vegetables to a separate bowl and set aside.
  5. Add the remaining tablespoon of olive oil to the same skillet. Working in batches, arrange the seasoned chicken pieces in a single layer and cook for a few minutes on each side until lightly browned and fully cooked. Transfer the chicken to the bowl containing the sautéed vegetables. Repeat with the remaining chicken, ensuring it reaches an internal temperature of 165°F (74°C).
  6. Pour the coconut milk into the same skillet and heat over medium-high heat. Stir regularly, scraping up the flavorful browned bits from the bottom of the skillet. Allow the coconut milk to bubble gently and thicken slightly.
  7. Stir the Worcestershire sauce into the coconut milk until well combined.
  8. Return the cooked chicken, onions, jalapeños, and garlic to the skillet. Add the chopped fresh basil and finely chopped ginger. Stir gently until the chicken is evenly coated in the creamy coconut curry sauce.
  9. Simmer the mixture for approximately 2 minutes, stirring occasionally, until the flavors combine and everything is heated through.
  10. Divide the warm cooked brown rice among four serving bowls. Spoon the basil chicken and coconut curry sauce generously over the rice. Garnish with additional fresh basil leaves and serve immediately.

Notes

Chicken thighs: Substitute boneless, skinless chicken thighs for chicken breasts if you prefer juicier, more tender meat. Adjust the cooking time as necessary.

Adjust the spice level: Remove the jalapeño seeds and membranes for a milder curry. For additional heat, leave some seeds in or add crushed red pepper flakes.

Coconut milk: Full-fat coconut milk produces the richest and creamiest sauce. Light coconut milk can be used for a lighter version, although the sauce will be thinner.

Vegetable additions: Add bell peppers, zucchini, broccoli, or spinach for extra color and nutrition. Cook firmer vegetables with the onions and add spinach near the end.

Thai-inspired variation: Add a splash of lime juice, a small amount of fish sauce, and Thai basil for a different flavor profile.

Shrimp variation: Replace the chicken with peeled and deveined shrimp. Add the shrimp toward the end of cooking and simmer until opaque and fully cooked.

Low-carb option: Serve the curry over cauliflower rice or sautéed zucchini noodles instead of brown rice.

Dried basil substitute: Replace the 1/3 cup fresh basil with approximately 1 tablespoon dried basil. Add dried basil earlier in the cooking process to release its flavor.

Thicker sauce: Simmer the coconut milk uncovered for a few additional minutes. Alternatively, combine 1 teaspoon cornstarch with 1 tablespoon cold water and stir into the simmering sauce until thickened.

Serving suggestions: Serve with brown rice, jasmine rice, basmati rice, cauliflower rice, or warm naan. Steamed broccoli, roasted green beans, and cucumber salad make excellent side dishes.

Refrigeration: Store cooled curry in an airtight container in the refrigerator for up to 3–4 days. Refrigerate promptly within two hours of cooking and store cooked rice separately.

Freezing: Freeze cooled chicken and coconut curry sauce in freezer-safe containers for up to 2–3 months for best quality. The coconut sauce may separate slightly after thawing but usually becomes creamy again with gentle reheating.

Reheating: Warm the curry over medium-low heat on the stovetop, adding a splash of water or coconut milk if needed. Alternatively, microwave in short intervals, stirring between intervals. Reheat thoroughly to 165°F (74°C).

Food safety: Always cook chicken to an internal temperature of 165°F (74°C). Cool cooked rice quickly, refrigerate promptly, and avoid repeatedly reheating the same portion.

Timing: The recipe requires approximately 15 minutes of preparation, 15 minutes of cooking, and an additional 30 minutes for the chicken to rest, bringing the total elapsed time to approximately 1 hour.
