Description

These BBQ Brisket Melts are hearty, cheesy sandwiches packed with smoky barbecue brisket and melted cheddar, grilled between crispy, buttery slices of bread. Perfect for a quick and satisfying comfort meal.

Ingredients

2 cups cooked brisket, shredded

1/2 cup barbecue sauce

4 slices sourdough or Texas toast

1 tablespoon butter, softened

1 cup shredded cheddar cheese

1/2 cup thinly sliced red onion (optional)

1/4 cup chopped fresh parsley (optional)

Instructions

  1. In a medium bowl, combine the shredded brisket and barbecue sauce. Mix until the meat is evenly coated.
  2. Butter one side of each slice of bread and place them butter-side down on a clean surface.
  3. Divide the BBQ brisket mixture evenly between two slices of bread. Top with shredded cheddar cheese and sliced red onion if using.
  4. Place the remaining slices of bread on top, buttered sides facing outward.
  5. Heat a skillet over medium heat. Cook the sandwiches for 4 to 5 minutes per side, until the bread is golden brown and crisp and the cheese is fully melted.
  6. Remove from the skillet, sprinkle with fresh parsley if desired, slice in half, and serve warm.

Notes

Substitute cheddar with smoked gouda or pepper jack for a different flavor profile.

Add sliced pickles or crispy fried onions for extra crunch.

Prepare the brisket mixture ahead of time and refrigerate until ready to assemble.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in a skillet over medium-low heat to maintain crispness.
