Description

Berry Custard Tartlets feature buttery homemade tart shells filled with silky Italian custard cream and topped with vibrant fresh berries. These elegant mini desserts are perfect for celebrations, afternoon tea, or any special occasion.


Ingredients

2 large egg yolks

1/3 cup sugar

2 tablespoons cornstarch

10 fl oz hot milk

1 teaspoon vanilla extract

1 egg

1/2 cup sugar

4 oz unsalted butter, softened

1 teaspoon vanilla extract

Pinch of salt

1 1/2 cups all-purpose flour

Fresh berries, for topping


Instructions

  1. Warm the milk until hot but not boiling.
  2. Whisk the egg yolks, sugar, and cornstarch together in a saucepan until smooth and fluffy.
  3. Gradually whisk the hot milk into the egg mixture.
  4. Cook over medium heat, stirring constantly, until the custard thickens. Stir in the vanilla extract, cool, and refrigerate until chilled.
  5. Beat the egg and sugar until light and fluffy.
  6. Mix in the softened butter, vanilla extract, salt, and flour until a soft dough forms.
  7. Wrap the dough and refrigerate for 30 minutes.
  8. Preheat the oven to 350°F (175°C).
  9. Roll out the dough, cut circles, press into tartlet molds, and prick the bottoms with a fork.
  10. Bake for 14 to 15 minutes until lightly golden, then cool completely.
  11. Fill each cooled tart shell with chilled Italian custard.
  12. Arrange fresh berries on top and serve chilled.

Notes

Use a mix of strawberries, raspberries, blueberries, and blackberries for extra color.

Add lemon or orange zest to the custard for a citrus flavor.

Brush cooled tart shells with melted white chocolate before filling to help keep them crisp.

Decorate with fresh mint leaves or a dusting of powdered sugar before serving.

Store assembled tartlets in the refrigerator for up to 2 days, or store shells and custard separately for best texture.
