Description
These Blueberry Baked Oats are soft, fluffy, and bursting with juicy blueberries. Made with blended rolled oats, ripe banana, almond milk, maple syrup, and warm spices, this easy vegan breakfast tastes like a freshly baked blueberry muffin.
Ingredients
1 cup old-fashioned rolled oats
1 ripe banana
1 cup unsweetened almond milk
1 teaspoon baking powder
1 teaspoon chai spice or ground cinnamon
2 tablespoons maple syrup
⅓ cup fresh or frozen blueberries
Instructions
- Preheat the oven to 375°F (190°C). Prepare two 10-ounce ramekins or small oven-safe baking dishes, lightly greasing them if desired.
- Add the rolled oats, ripe banana, almond milk, baking powder, chai spice or cinnamon, and maple syrup to a high-speed blender.
- Blend for approximately 30 seconds to 1 minute, until the mixture is smooth and creamy and the oats are completely broken down.
- Divide the blended oat batter evenly between the two prepared ramekins, leaving a little space at the top for the mixture to rise.
- Scatter the blueberries evenly over each portion. Gently press a few blueberries into the batter while leaving the remaining berries on top.
- Place the ramekins in the preheated oven and bake for approximately 30 minutes, or until the centers are set, the edges are lightly golden, and the oats have risen slightly. Add a few extra minutes if necessary, especially when using frozen blueberries.
- Remove the ramekins from the oven and allow the baked oats to cool for a few minutes before serving.
- Serve warm directly from the ramekins. Add optional toppings such as yogurt, fresh blueberries, or a light drizzle of maple syrup.
Notes
Use a very ripe banana for the best natural sweetness and a moist, tender texture.
Fresh or frozen blueberries work equally well. Frozen blueberries do not need to be thawed before baking.
For a gluten-free version, use certified gluten-free rolled oats.
To make this recipe without a blender, substitute approximately 1 cup of oat flour for the rolled oats and mix with mashed banana and the remaining ingredients until smooth. Adjust the milk if necessary.
For lemon blueberry baked oats, add freshly grated lemon zest to the batter.
For a chocolate variation, sprinkle 1 tablespoon of dark chocolate chips over the batter before baking.
For additional protein, add a little vanilla protein powder and adjust the almond milk to maintain a smooth consistency. Baking time may need adjustment.
Replace some blueberries with raspberries, blackberries, or chopped strawberries for a mixed berry variation.
Add chopped walnuts, pecans, or sliced almonds for extra crunch, or swirl in a spoonful of peanut butter or almond butter for added richness.
Avoid overfilling the ramekins because the oat mixture rises slightly during baking.
For the fluffiest texture, blend the oats thoroughly, use fresh baking powder, and bake until the centers are fully set.
Store cooled baked oats in an airtight container in the refrigerator for up to 4 days.
Freeze individual portions in freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator before reheating.
To reheat in the microwave, warm a refrigerated portion for approximately 45–90 seconds, or until heated through. Add a splash of almond milk if needed to maintain moisture.
To reheat in the oven, warm at 350°F (175°C) for approximately 10–15 minutes, covering loosely with foil to prevent drying.
For meal preparation, bake the oats in advance and refrigerate individual portions rather than storing the uncooked batter overnight.
Serve with plant-based yogurt, additional fresh blueberries, or a drizzle of maple syrup if desired.
