Description

No-bake blueberry cheesecake protein bites that are healthy, packed with protein, and full of flavor, making them a perfect snack for any time of the day.

Ingredients

1 cup rolled oats

1/2 cup vanilla protein powder

1/2 cup Greek yogurt

1/4 cup almond butter

1/4 cup dried blueberries

1 tablespoon honey

1/2 teaspoon vanilla extract

1/4 teaspoon cinnamon

Pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, protein powder, cinnamon, and salt.
  2. Add Greek yogurt, almond butter, honey, and vanilla extract, mixing until well incorporated.
  3. Gently fold in the dried blueberries.
  4. Roll the mixture into small bite-sized balls, about 1 inch in diameter.
  5. Place the protein bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
  6. Once set, store the protein bites in an airtight container in the fridge for up to a week.

Notes

For variations, consider adding other dried fruits like cranberries or raisins or chopped nuts for crunch.

If desired, reduce honey or substitute with a natural sweetener like stevia or maple syrup.

Try using different protein powder flavors such as chocolate or strawberry for a new taste.
