Description
Thick, chewy Cadbury Heroes Cookies with lightly crisp golden edges, soft centers, and generous chunks of creamy chocolate and gooey caramel. These bakery-style cookies are perfect for sharing, celebrations, or using up leftover chocolates.
Ingredients
160 g unsalted butter
100 g white caster sugar
150 g light brown sugar
1 teaspoon vanilla extract
1 medium whole egg, at room temperature
1 medium egg yolk, at room temperature
250 g self-raising flour
200 g Cadbury Heroes, roughly chopped
Instructions
- Place the unsalted butter in a microwave-safe bowl and microwave for approximately 30–40 seconds until completely melted. Allow it to cool slightly before adding the remaining ingredients.
- Add the white caster sugar, light brown sugar, vanilla extract, whole egg, and egg yolk to the melted butter. Mix thoroughly until smooth and fully combined.
- Gently fold in the self-raising flour until a soft cookie dough forms. Avoid overmixing to maintain a tender, chewy texture.
- Add the roughly chopped Cadbury Heroes chocolates and gently fold them into the dough until evenly distributed.
- Cover the bowl tightly with clingfilm and refrigerate the cookie dough for at least 4 hours, preferably overnight, to develop flavor and prevent excessive spreading.
- Preheat the oven to 180°C (350°F) and line two large baking trays with parchment paper. Remove the chilled dough from the refrigerator and let it rest at room temperature for approximately 10 minutes.
- Scoop out heaped tablespoons of cookie dough and gently roll into balls. Arrange them on the prepared baking trays without flattening, leaving approximately 8–10 cm between each cookie.
- Bake for approximately 10–12 minutes until the edges are lightly golden and the centers still appear soft and slightly underbaked.
- Leave the cookies on the baking trays for approximately 15 minutes to firm up before transferring or serving. Enjoy slightly warm for soft, gooey chocolate centers.
Notes
Chill the cookie dough for at least 4 hours, preferably overnight, to achieve thick cookies with chewy centers and prevent excessive spreading.
For the best texture, avoid overmixing the flour and do not flatten the dough balls before baking.
For extra chocolate flavor, add 50 g of dark or milk chocolate chips to the dough.
For a white chocolate variation, replace some of the Cadbury Heroes with chopped white chocolate.
Add finely grated orange zest for a chocolate orange variation.
For extra crunch, fold in a handful of chopped hazelnuts, walnuts, or pecans.
For salted caramel cookies, sprinkle a small pinch of flaky sea salt over the cookies immediately after baking.
For mini cookies, make smaller dough balls and begin checking for doneness after approximately 7–9 minutes.
To replace self-raising flour, combine 250 g plain flour with approximately 2 teaspoons baking powder.
Other chopped chocolates, including Cadbury Dairy Milk, Celebrations, or chocolate buttons, can replace Cadbury Heroes. Keep the total chocolate quantity close to 200 g.
Store completely cooled cookies in an airtight container at room temperature for up to 4–5 days or refrigerate for up to 1 week.
Freeze baked cookies in a freezer-safe container with parchment paper between layers for up to 3 months. Thaw at room temperature before serving.
To freeze unbaked dough, shape into balls, freeze on a lined tray until firm, and transfer to a freezer-safe container. Bake directly from frozen, adding approximately 2–4 minutes to the usual baking time.
To reheat, microwave individual cookies for 8–12 seconds or warm in an oven preheated to 150°C (300°F) for approximately 3–5 minutes.
Allow an additional 15 minutes for cooling before serving.
