These Cheesy Garlic Zucchini Steaks are a delightful and healthy side dish, offering a perfect balance of flavors. With crispy zucchini slices topped with a savory garlic butter sauce and melted cheese, this recipe makes for an irresistible addition to any meal. Whether I’m preparing a light dinner or a low-carb option for guests, these cheesy zucchini steaks always steal the show.

Cheesy Garlic Zucchini Steaks

Ingredients

4 medium zucchinis

2 tablespoons olive oil

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon salt

¼ teaspoon black pepper

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

2 tablespoons butter, melted

2 cloves garlic, minced

Fresh parsley, chopped (for garnish)

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

Directions

Preheat the oven to 400°F (200°C).

Slice the zucchinis into ½-inch thick rounds.

Lay the zucchini slices in a single layer on a baking sheet lined with parchment paper.

Drizzle the olive oil over the zucchini slices and sprinkle with garlic powder, onion powder, salt, and black pepper.

Roast the zucchini in the preheated oven for 20-25 minutes, or until the zucchini is tender and slightly golden.

While the zucchini is roasting, prepare the garlic butter: In a small bowl, combine the melted butter and minced garlic.

After removing the zucchini from the oven, brush the garlic butter mixture over the roasted zucchini slices.

Sprinkle the mozzarella and Parmesan cheeses on top of each zucchini slice.

Return the zucchini to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Garnish with chopped parsley before serving.

Variations

For a bit more flavor, try adding some red pepper flakes to the garlic butter for a spicy kick.

You could also swap the mozzarella and Parmesan cheeses with other cheese varieties like cheddar or gouda for a different flavor profile.

If I want a bit of extra crunch, I sometimes top the zucchini with a sprinkle of breadcrumbs before adding the cheese.

Storage/Reheating

To store leftovers, place the cheesy zucchini steaks in an airtight container in the fridge for up to 3 days. To reheat, simply place them in the oven at 350°F (175°C) for about 10 minutes, or until heated through. You can also microwave them for a quicker option, though the zucchini may lose some of its crispy texture.

FAQs

Can I make these Cheesy Garlic Zucchini Steaks ahead of time?

Yes! You can prepare the zucchini up to the point of roasting. After slicing and seasoning the zucchini, cover them and store in the fridge for up to a day. When ready to bake, simply follow the remaining instructions.

Can I use a different type of cheese?

Definitely! I love experimenting with different cheeses. You can swap mozzarella with provolone, gouda, or even cheddar for a different twist on the flavor.

Can I make this recipe gluten-free?

Yes, this recipe is naturally gluten-free. Just be sure to double-check that any seasonings or additional toppings (like breadcrumbs) are also gluten-free if you need to avoid gluten.

What can I serve with these Cheesy Garlic Zucchini Steaks?

These zucchini steaks make a great side dish for grilled meats, pasta, or even as a topping for a fresh salad. I also enjoy pairing them with other roasted vegetables.

Can I freeze the zucchini steaks?

While I wouldn't recommend freezing the cooked zucchini steaks, you can freeze the sliced zucchini before roasting. Lay the slices on a baking sheet and freeze them individually before transferring to a freezer-safe bag. When you're ready to cook, simply roast them directly from the freezer.

Conclusion

These Cheesy Garlic Zucchini Steaks have become one of my go-to side dishes. They’re simple, full of flavor, and a great way to enjoy zucchini in a new and exciting way. Whether I’m making a light weeknight meal or serving them for a special occasion, they’re always a hit!
