Ingredients

2 tablespoons butter

1 small onion, diced

2 cloves garlic, minced

2 cups cooked chicken, shredded

1 1/2 cups wild rice, cooked

1 cup frozen peas and carrots

1/4 cup flour

2 cups chicken broth

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a large skillet, melt butter over medium heat. Add onion and garlic, sauté for 3-4 minutes until softened.

  3. Stir in flour and cook for 1-2 minutes to form a roux.

  4. Gradually add chicken broth and heavy cream, stirring constantly until the sauce thickens, about 5-7 minutes.

  5. Stir in salt, pepper, thyme, garlic powder, and onion powder.

  6. Add shredded chicken, cooked wild rice, and frozen peas and carrots. Stir to combine.

  7. Pour mixture into a greased 9x13-inch baking dish and top with shredded cheddar cheese.

  8. Bake for 20-25 minutes, or until the casserole is bubbly and the cheese is golden and melted.

  9. Serve warm and enjoy!

Notes

For a spicier dish, consider adding a pinch of cayenne pepper or hot sauce to the sauce.

This casserole is great for using leftover chicken or turkey.

You can use different vegetables, like mushrooms or spinach, or swap the cheddar cheese for a different variety like mozzarella.
