Description
This easy Chicken Pot Pie Casserole combines tender rotisserie chicken, colorful mixed vegetables, and a rich, creamy sauce beneath fluffy, golden biscuits. A comforting, family-friendly dinner perfect for busy weeknights.
Ingredients
1 can Grands biscuits (8 biscuits)
4 tablespoons unsalted butter
4 cups frozen mixed vegetables
4 cups shredded rotisserie chicken
2 cups milk
2 cans (10.5 ounces each) cream of chicken soup
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- Melt the unsalted butter in a large skillet over medium heat. Add the frozen mixed vegetables and cook for 4–5 minutes, stirring occasionally, until warmed through.
- Add the shredded rotisserie chicken, milk, cream of chicken soup, salt, black pepper, and garlic powder. Stir thoroughly until everything is evenly combined and coated in the creamy sauce.
- Continue cooking for another 3–5 minutes, stirring frequently, until the filling is hot, smooth, and creamy.
- Transfer the chicken and vegetable filling to the prepared baking dish and spread into an even layer. Arrange the 8 refrigerated biscuits evenly over the filling, leaving a little space between them to allow expansion.
- Bake for 25–30 minutes, or until the filling is bubbling and the biscuits are golden brown and completely cooked through. If the biscuits brown too quickly, loosely cover the casserole with aluminum foil and continue baking until their centers are done.
- Remove the casserole from the oven and let it rest for 5–10 minutes before dividing into 8 portions and serving warm.
Notes
Chicken substitutions: Replace rotisserie chicken with an equal amount of fully cooked, shredded chicken breasts, chicken thighs, or turkey.
Vegetable options: Use frozen peas, carrots, corn, and green beans, or substitute fresh vegetables. Cook firm fresh vegetables until nearly tender before adding them to the filling.
Cheesy variation: Stir 1 cup shredded cheddar cheese into the creamy filling before baking.
Mushroom variation: Sauté sliced mushrooms in the butter before adding the mixed vegetables.
Herb variation: Add dried thyme, rosemary, or poultry seasoning for additional savory flavor.
Extra vegetables: Add chopped broccoli, diced celery, or additional carrots, adjusting the sauce quantity if needed.
Prevent soggy biscuits: Make sure the filling is hot before adding the biscuits, leave space between them, and bake until the biscuit centers are fully cooked.
Make ahead: Prepare the chicken filling up to 24 hours in advance and refrigerate in a covered container. Add the biscuits just before baking and allow extra cooking time if the filling is cold.
Refrigeration: Store leftovers in airtight containers within 2 hours of cooking and refrigerate for up to 3–4 days.
Freezing: Freeze cooked individual portions in freezer-safe containers for up to 2–3 months for best quality. The biscuits may soften after thawing.
Oven reheating: Cover leftovers loosely with foil and reheat at 350°F (175°C) for approximately 15–20 minutes, or until thoroughly heated. Remove the foil near the end to crisp the biscuits.
Microwave reheating: Heat individual portions in short intervals until hot throughout. Reheated leftovers should reach 165°F (74°C).
Serving suggestions: Serve with a crisp green salad, roasted broccoli, steamed green beans, or cucumber salad.
