Description
These Chili Oil Peanut Noodles combine tender ramen noodles with a creamy peanut butter sauce, spicy chili crisp, fresh garlic, and sweet chili sauce. Ready in just 10 minutes, this rich, nutty, and flavorful dish is perfect for a quick lunch or easy meatless dinner.
Ingredients
3 tablespoons crushed peanuts
½ cup peanut butter, preferably smooth
2 tablespoons chili crisp
1 tablespoon sesame seeds
2 tablespoons sweet chili sauce
3 scallions, sliced
4 cloves garlic, minced
½ cup boiling water
2–3 ramen noodle nests, cooked
100 g puffed tofu, optional
Instructions
- Bring a pot of water to a boil. Add the ramen noodle nests and cook according to the package instructions until tender but still slightly firm. Drain thoroughly and set aside.
- In a large mixing bowl or pan, combine the crushed peanuts, peanut butter, chili crisp, sesame seeds, sweet chili sauce, sliced scallions, and minced garlic. Reserve a few scallion slices and crushed peanuts for garnishing if desired.
- Carefully pour ½ cup of boiling water over the peanut butter mixture. Stir or whisk thoroughly until the peanut butter softens and the ingredients form a smooth, creamy, glossy sauce. Add a small splash of additional hot water if the sauce is too thick.
- Add the cooked ramen noodles to the peanut chili sauce. If using puffed tofu, add it now. Toss gently but thoroughly until every noodle strand is evenly coated with the creamy sauce.
- Divide the noodles among four serving bowls. Garnish with additional sliced scallions, sesame seeds, or crushed peanuts. Drizzle with extra chili crisp for more heat, if desired. Serve immediately while warm.
Notes
Extra spicy variation: Add another tablespoon of chili crisp, crushed red pepper flakes, or a drizzle of spicy chili oil.
Creamy coconut variation: Replace part of the boiling water with warm coconut milk for additional richness and subtle sweetness.
Vegetable additions: Stir in shredded carrots, sliced bell peppers, steamed broccoli, or sautéed mushrooms for extra color and nutrition.
High-protein option: Add the optional puffed tofu, crispy baked tofu, or edamame for a more substantial meal.
Tangy variation: Finish with freshly squeezed lime juice to brighten the rich peanut sauce.
Noodle substitutions: Replace ramen with rice noodles, udon, soba, or spaghetti, adjusting cooking times according to package instructions.
Peanut butter substitution: Crunchy peanut butter works well if you prefer additional texture.
Chili crisp substitution: Regular chili oil can be used instead, although it will provide less crunch. Add red pepper flakes or extra garlic if desired.
Sauce consistency: Add hot water one tablespoon at a time until the sauce reaches your preferred consistency.
Vegan option: Choose vegan ramen noodles, chili crisp, and sweet chili sauce, checking labels for animal-derived ingredients.
Storage: Refrigerate leftovers promptly in an airtight container for up to 3–4 days.
Freezing: Avoid freezing fully assembled noodles because their texture may soften. Freeze the peanut sauce separately in an airtight container for up to 2 months and thaw in the refrigerator before using.
Stovetop reheating: Warm leftovers over medium-low heat with a splash of water, stirring gently until heated thoroughly.
Microwave reheating: Add 1–2 tablespoons of water, cover loosely, and microwave in short intervals, stirring until steaming hot throughout.
Meal preparation: Store the sauce and cooked noodles separately to prevent the noodles from becoming overly soft.
Cold serving option: Serve the noodles chilled with a splash of water or lime juice to loosen the sauce.
Nutrition values are approximate per serving, based on four servings without optional tofu. Actual values depend on the ramen, peanut butter, chili crisp, and sauces used.
