Description
Tender chicken thighs simmered in a rich, creamy coconut peanut sauce with Thai red curry paste, fresh ginger, garlic, and chili. This flavorful Thai-inspired dinner is perfect served over fluffy jasmine rice with crunchy peanuts and fresh herbs.
Ingredients
2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
1 tablespoon vegetable oil
1 small onion, finely diced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons red curry paste
1 teaspoon chili flakes
1 red bell pepper, sliced
1 can (13.5 ounces) coconut milk
1/2 cup creamy peanut butter
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon brown sugar
1 tablespoon fresh lime juice
1/2 cup chicken broth
2 tablespoons chopped roasted peanuts
2 tablespoons chopped fresh cilantro
2 green onions, sliced
Cooked jasmine rice, for serving
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat. Add the bite-sized chicken thighs and cook until lightly browned on all sides. The chicken does not need to be fully cooked at this stage. Transfer to a plate and set aside.
- In the same skillet, add the diced onion and sauté for 3 to 4 minutes until softened and translucent. Stir in the minced garlic and grated ginger and cook for another 30 seconds until fragrant.
- Add the red curry paste and chili flakes to the skillet. Stir continuously for approximately 1 minute to release their aromatic flavors.
- In a medium mixing bowl, whisk together the coconut milk, creamy peanut butter, soy sauce, fish sauce, brown sugar, lime juice, and chicken broth until smooth and well combined.
- Pour the peanut coconut sauce into the skillet and stir gently to combine with the onion, garlic, ginger, and curry mixture.
- Return the browned chicken and any accumulated juices to the skillet. Add the sliced red bell pepper and stir to coat everything evenly in the sauce.
- Bring the mixture to a gentle simmer. Reduce the heat to medium-low, cover, and cook for 15 to 20 minutes, stirring occasionally, until the chicken is tender, the sauce has thickened, and the chicken reaches an internal temperature of 165°F (74°C).
- Taste the sauce and adjust the seasoning as desired. Add a splash of soy sauce for more saltiness, additional lime juice for brightness, or extra chili flakes for more heat.
- Spoon the Chili Peanut Coconut Chicken over freshly cooked jasmine rice. Garnish with chopped roasted peanuts, fresh cilantro, and sliced green onions. Serve warm.
Notes
Chicken thighs are recommended because they remain tender and juicy during simmering. Boneless, skinless chicken breasts can be substituted, but adjust the cooking time to prevent drying out.
For the richest and creamiest sauce, use full-fat coconut milk and creamy peanut butter.
For a spicier dish, increase the chili flakes, add chili garlic sauce, or garnish with thinly sliced fresh red chilies.
For a milder version, reduce or omit the chili flakes and choose a mild red curry paste.
Add broccoli florets, sliced carrots, snap peas, or baby spinach for extra vegetables and texture.
For a vegetarian variation, replace the chicken with firm tofu or chickpeas, use vegetable broth, and substitute the fish sauce with a vegetarian alternative.
Serve with jasmine rice, brown rice, rice noodles, quinoa, or cauliflower rice. Steamed broccoli, green beans, and cucumber salad also make excellent accompaniments.
If the sauce becomes too thick, stir in a little chicken broth or coconut milk. If it is too thin, simmer uncovered for several minutes until thickened.
For additional texture, crunchy peanut butter can replace creamy peanut butter.
Store cooled leftovers in an airtight container in the refrigerator for 3 to 4 days. Refrigerate within 2 hours of cooking and store rice separately.
Freeze the cooled chicken and sauce in a freezer-safe container for up to 2 to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat gently in a skillet over medium-low heat with a splash of broth or coconut milk, or microwave in short intervals, stirring occasionally, until heated through to 165°F (74°C).
The dish can be prepared a day ahead. Its flavors develop as it rests in the sauce. Prepare fresh jasmine rice before serving.
