Description

A rich, moist chocolate cake baked over a sweet cherry layer and inverted to reveal a beautiful fruit topping. This comforting dessert is perfect served warm with whipped cream or vanilla ice cream.


Ingredients

2 cups fresh or frozen pitted cherries

1/3 cup sugar (for cherry layer)

1 teaspoon cornstarch

1 cup sugar

1 cup all-purpose flour

1/3 cup plus 1 tablespoon cocoa powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 eggs

1/2 cup soured milk

1/2 cup brewed black coffee

1/4 cup vegetable oil

1/2 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan at least 2 inches deep, then line the bottom with parchment paper.
  2. In a small bowl, combine 1/3 cup sugar and cornstarch. Toss with the cherries until evenly coated.
  3. Spread the cherry mixture evenly over the bottom of the prepared pan.
  4. In a large bowl, combine the remaining sugar, flour, cocoa powder, baking powder, baking soda, salt, eggs, soured milk, brewed coffee, vegetable oil, and vanilla extract.
  5. Beat with an electric mixer for about 2 minutes until the batter is smooth.
  6. Carefully pour the batter over the cherry layer and spread evenly.
  7. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 5 minutes, then carefully invert onto a heatproof serving plate.
  9. Serve warm or at room temperature with whipped cream or vanilla ice cream if desired.

Notes

Add a handful of dark chocolate chips for extra richness.

Substitute raspberries or blackberries for the cherries if desired.

Add 1 teaspoon almond extract to enhance the cherry flavor.

Top with toasted almonds or pecans for added crunch.

Dust with powdered sugar before serving for a simple finish.

Store covered in the refrigerator for up to 4 days or freeze individual slices for up to 3 months.

Reheat in the microwave for 15 to 20 seconds or in a 300°F (150°C) oven for about 10 minutes.
