Cinnamon Roll Oatmeal Bars

Ingredients

1 ½ cups (135 g) rolled oats

½ cup (60 g) all‑purpose flour

¼ cup (50 g) brown sugar (for the base)

¼ cup (57 g) melted butter (for the base)

¼ tsp (1.5 g) salt

¼ cup (50 g) brown sugar (for the filling)

¼ cup (57 g) softened butter (for the filling)

1 tbsp (8 g) ground cinnamon (for the filling)

½ cup (60 g) powdered sugar (for the glaze)

1‑2 tbsp (15‑30 ml) milk (for the glaze)

¼ tsp (1.25 ml) vanilla extract (for the glaze)

Directions

I preheat my oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang so I can lift the bars out easily once they’re done.

In a large mixing bowl, I combine the rolled oats, flour, ¼ cup brown sugar, melted butter, and salt. I mix everything until it’s well blended.

I press this oat mixture firmly into the bottom of the prepared pan, using a spoon or my hands to really compact it.

In another bowl, I cream together the softened butter, ¼ cup brown sugar, and ground cinnamon until it’s smooth and fluffy.

I spread this cinnamon mixture evenly over the oat base, and sometimes I swirl it lightly with a knife for that cinnamon roll look.

I bake the bars for about 20–25 minutes, or until the edges are golden and the center looks set.
