Description
Classic Creamy Macaroni Salad combines tender elbow macaroni, crisp vegetables, and fresh herbs with a rich, tangy-sweet homemade dressing. This easy make-ahead side dish is perfect for summer barbecues, picnics, potlucks, and family gatherings.
Ingredients
1 lb uncooked macaroni pasta
½ cup diced red onion
1 medium red bell pepper, diced
3 short celery ribs, diced
¼ cup diced green onion
2 tablespoons minced fresh parsley
1 tablespoon minced fresh dill weed
1 cup mayonnaise
½ cup sour cream
1 tablespoon Dijon mustard
2 tablespoons apple cider vinegar
1½ tablespoons brown sugar
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon salt, or to taste
Instructions
- Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions, approximately 8 minutes, until al dente. Avoid overcooking to maintain the pasta's texture after chilling.
- Drain the cooked macaroni thoroughly in a colander. Allow it to cool until no longer hot, stirring occasionally to prevent sticking.
- While the pasta cooks and cools, dice the red onion, red bell pepper, celery, and green onion into small, evenly sized pieces. Finely mince the fresh parsley and dill.
- In a medium mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, brown sugar, garlic powder, black pepper, and salt. Whisk until smooth and creamy. Taste and adjust the seasoning, vinegar, or sweetness as desired.
- Transfer the cooled macaroni to a large mixing bowl. Add the diced red onion, bell pepper, celery, green onion, parsley, and dill. Gently toss until the vegetables and herbs are evenly distributed.
- Pour the creamy dressing over the macaroni mixture. Stir gently but thoroughly until every piece of pasta is evenly coated. Scrape the bottom of the bowl to incorporate all the dressing.
- Cover the bowl tightly with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 2 hours to allow the flavors to blend and the pasta to absorb the dressing.
- Before serving, gently stir the macaroni salad to redistribute the dressing. If necessary, add a small spoonful of mayonnaise or sour cream to restore creaminess. Adjust salt and black pepper to taste and serve chilled.
Notes
Make ahead: Prepare the macaroni salad several hours ahead or the night before serving for the best flavor. Stir well before serving.
Pasta options: Traditional elbow macaroni works best, but small shells, ditalini, or other short pasta shapes are suitable substitutes.
Prevent dryness: If the pasta absorbs too much dressing during refrigeration, stir in a little mayonnaise, sour cream, or milk until creamy again.
Prevent watery salad: Drain the macaroni thoroughly, cool it before adding the dressing, and dry washed vegetables and herbs before chopping.
Egg variation: Add 2 to 3 chopped hard-boiled eggs for a richer, heartier macaroni salad.
Tuna variation: Mix in one can of drained tuna for a more filling lunch option.
Extra crunch: Add diced cucumber, shredded carrots, or finely chopped radishes for additional freshness and texture.
Lighter dressing: Replace part of the mayonnaise with plain Greek yogurt for a lighter, tangier dressing.
Spicy variation: Add cayenne pepper, hot sauce, or finely diced jalapeño for a spicy kick.
Cheesy variation: Stir in small cubes of cheddar cheese for additional richness and flavor.
Serving suggestions: Serve chilled alongside grilled chicken, burgers, barbecue ribs, sandwiches, hot dogs, or grilled vegetables.
Storage: Keep leftovers in an airtight container in the refrigerator at 40°F (4°C) or below for 3 to 4 days.
Food safety: Do not leave macaroni salad at room temperature for more than 2 hours, or more than 1 hour when temperatures exceed 90°F (32°C).
Freezing: Freezing is not recommended because the creamy dressing may separate and the pasta and vegetables may lose their texture.
Reheating: No reheating is necessary. This salad is best served cold.
