With just a handful of simple components, I can whip up these no-bake bars that are both satisfying and irresistibly delicious. Coconut Bars

Ingredients

2 cups shredded unsweetened coconut

1/4 cup coconut oil, melted

1/4 cup pure maple syrup or agave

1/2 teaspoon pure vanilla extract

1/8 teaspoon salt

Optional: 1/2 cup mini chocolate chips or melted chocolate for topping

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

Directions

Line an 8x8 inch pan with parchment paper.

In a medium mixing bowl, combine the shredded coconut, melted coconut oil, maple syrup, vanilla extract, and salt. Stir until the mixture is evenly combined and sticky.

Press the coconut mixture firmly into the prepared pan using a spatula or your hands.

If using chocolate chips, sprinkle them over the top and gently press them into the surface. Alternatively, drizzle melted chocolate over the top.

Refrigerate for at least 1 hour, or until firm enough to slice into bars.

Storage/Reheating

I store these coconut bars in an airtight container in the fridge, where they’ll stay fresh for up to a week. If I want to keep them for a longer period, I can freeze them for longer storage. When ready to eat, I simply pull them out of the fridge or freezer and enjoy.

FAQs

Can I use sweetened shredded coconut instead of unsweetened?

Yes, you can! If you prefer a sweeter bar, using sweetened shredded coconut will definitely do the trick. Just keep in mind that this will increase the sugar content of the bars.

How long do these bars last in the fridge?

Stored in an airtight container, these coconut bars will last up to a week in the fridge. If I want them to last longer, I can freeze them.

Can I use something other than coconut oil?

If I don’t have coconut oil, I can substitute with other oils like olive oil or even melted butter. However, coconut oil gives these bars a signature coconut flavor that’s hard to beat.

How do I know when the coconut bars are firm enough?

I let the coconut bars chill in the fridge for at least 1 hour. If they’re firm to the touch and hold their shape when I slice them, they’re ready to eat.

Can I add nuts or other mix-ins to the bars?

Definitely! If I’m in the mood for a little extra crunch, I can add some chopped nuts, like almonds or cashews. Just stir them into the coconut mixture before pressing it into the pan.

Conclusion

These coconut bars are the perfect snack or treat to satisfy any sweet tooth. They’re quick and easy to make, and the flavor is simply divine. Whether I’m enjoying them as a midday snack or serving them at a gathering, they’re always a hit. With just a few ingredients, I get a chewy, naturally sweet bar that’s sure to please.
