Description

Ingredients

For the crust:

1 1/2 cups all-purpose flour

1/4 cup powdered sugar

1/2 teaspoon salt

1/2 cup unsalted butter, softened

For the filling:

2 large eggs

1 cup granulated sugar

1/2 cup all-purpose flour

1/4 teaspoon salt

1/2 cup shredded coconut

1/4 cup freshly squeezed lime juice (about 2 limes)

Zest of 1 lime

1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.

  2. Make the crust: In a bowl, combine flour, powdered sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs.

  3. Press the crust mixture into the prepared baking dish, ensuring it's evenly spread. Bake for 10-12 minutes, or until the edges are lightly golden.

  4. Prepare the filling: In a mixing bowl, whisk together the eggs, granulated sugar, flour, salt, shredded coconut, lime juice, lime zest, and vanilla extract.
