Description

This Country French Garlic Soup is a comforting and rustic dish with deep roasted garlic flavors, fresh herbs, and a creamy texture. Ingredients

2 whole heads of garlic, peeled

1 tablespoon olive oil

4 cups vegetable or chicken broth

1 small onion, finely chopped

1 tablespoon unsalted butter

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/2 cup heavy cream (or half-and-half for a lighter version)

2 egg yolks (for thickening, optional)

1/4 cup grated Parmesan cheese (optional)

Baguette slices, toasted

Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C). Place the peeled garlic cloves on a baking sheet, drizzle with olive oil, and roast for 20-25 minutes until golden and fragrant.
  2. In a large pot, melt the butter over medium heat and sauté the chopped onion until soft and translucent, about 3-4 minutes.
  3. Add the roasted garlic, vegetable or chicken broth, thyme, salt, and pepper. Simmer uncovered for 15-20 minutes.
  4. Blend the soup until smooth using an immersion blender or in batches in a blender.
  5. Whisk together egg yolks and heavy cream, then slowly temper the mixture with hot soup. Gradually stir it back into the pot over low heat.
  6. Stir in Parmesan cheese (if using) and cook for an additional 2-3 minutes until thickened.
  7. Serve hot with toasted baguette slices and garnish with fresh parsley.

Notes

For a vegetarian version, use vegetable broth.

For a lighter option, replace heavy cream with half-and-half and omit the egg yolks.

Freeze leftover soup for up to 2-3 months.

For a heartier soup, add diced potatoes or leeks.
