Description

This creamy coconut chickpea curry combines tender chickpeas, juicy tomatoes, aromatic spices, and rich coconut milk in a silky, flavorful sauce. Finished with fresh lime juice, it's a comforting vegan dinner that's ready in just 45 minutes.

Ingredients

2 tablespoons coconut oil

1 medium onion, finely diced

14 ounces diced tomatoes

16 ounces canned chickpeas, drained and rinsed

3 cloves garlic, minced

1½ tablespoons garam masala

1 teaspoon curry powder

¼ teaspoon ground cumin

13.5 ounces full-fat coconut milk

2 teaspoons coconut flour (optional, for thickening)

1 small lime, juiced

Sea salt, to taste

Ground black pepper, to taste

Instructions

  1. Heat the coconut oil in a large, deep, heavy-bottomed pot over medium-high heat until melted and hot.
  2. Add the finely diced onion and diced tomatoes. Season lightly with sea salt and ground black pepper. Reduce the heat to medium and cook for approximately 10 minutes, stirring occasionally, until the onion softens and the tomatoes release their juices.
  3. Stir in the drained and rinsed chickpeas, minced garlic, garam masala, curry powder, and ground cumin. Cook for about 1 minute, stirring continuously, until the chickpeas are evenly coated and the spices become fragrant.
  4. Pour in the full-fat coconut milk and stir thoroughly to combine with the tomato mixture and spices. For a thicker sauce, add the optional coconut flour and mix well to prevent lumps.
  5. Bring the curry to a gentle boil, then reduce the heat to medium-low. Simmer for 10–12 minutes, stirring occasionally, until the sauce thickens slightly and the flavors blend together. Add a splash of water if the sauce becomes too thick.
  6. Taste the curry and adjust the seasoning with additional sea salt, ground black pepper, or a small pinch of garam masala if desired.
  7. Remove the pot from the heat and stir in the freshly squeezed lime juice. Allow the curry to cool slightly before serving over warm basmati rice or alongside your favorite flatbread.

Notes

For the creamiest texture, use full-fat coconut milk. Light coconut milk can be substituted for a lighter sauce, although the curry will be less rich.

For a spinach variation, add two generous handfuls of fresh spinach during the final few minutes of simmering and cook until wilted.

For a spicier curry, add red pepper flakes, cayenne pepper, or finely chopped fresh chili along with the other spices.

For a heartier meal, add diced sweet potatoes and simmer until fork-tender, adding a little water if needed.

Cauliflower, bell peppers, carrots, or zucchini can be added for extra vegetables. Adjust the cooking time until the vegetables are tender.

For a naturally thicker sauce, mash a small portion of the chickpeas directly in the pot or simmer uncovered for a few additional minutes.

Substitute the canned chickpeas with approximately 1½ to 2 cups of cooked chickpeas if preferred.

Serve with basmati rice, jasmine rice, naan, roti, quinoa, or cauliflower rice. Garnish with fresh cilantro if desired.

For a gluten-free meal, check packaged spice blends for gluten-containing additives and serve with rice or certified gluten-free flatbread.

Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Refrigerate within two hours of cooking and store rice separately.

Freeze the curry in a freezer-safe container for up to 3 months, leaving room for expansion. Thaw overnight in the refrigerator before reheating.

Reheat gently on the stovetop over medium-low heat or in the microwave in short intervals, stirring occasionally. Add a splash of water or coconut milk if the sauce has thickened. Heat leftovers to 165°F (74°C).

This curry is excellent for meal preparation because its flavors continue to develop overnight. Add a little fresh lime juice before serving to brighten the flavor.
