Ready in just 35 minutes, this hearty Italian-inspired soup is perfect for cozy family dinners and busy weeknights.
Ingredients
1 lb Italian sausage, casings removed
1 small onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 cup ditalini pasta
1 cup shredded Parmesan cheese
2 cups fresh spinach, chopped
1 teaspoon Italian seasoning
Salt, to taste
Black pepper, to taste
Instructions
- Heat a large pot or Dutch oven over medium heat. Add the Italian sausage and cook until browned and fully cooked, breaking it into small crumbles with a wooden spoon. Remove the sausage and set aside, leaving a little rendered fat in the pot.
- Add the diced onion to the same pot and sauté for 3–4 minutes until softened and translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Slowly pour in the chicken broth and heavy cream, stirring to combine. Add the ditalini pasta and Italian seasoning, mixing well to distribute the ingredients evenly.
- Bring the soup to a gentle simmer over medium heat. Reduce the heat slightly and cook for approximately 10 minutes, stirring occasionally, until the pasta is tender. Avoid vigorous boiling to maintain a smooth, creamy broth.
- Return the cooked Italian sausage to the pot. Reduce the heat to low and gradually stir in the shredded Parmesan cheese until completely melted and incorporated into the broth.
- Add the chopped fresh spinach and stir gently. Cook for another 2–3 minutes until the spinach wilts and becomes tender.
- Taste the soup and season with salt and freshly ground black pepper as needed. Ladle into serving bowls and garnish with additional Parmesan cheese, cracked black pepper, or fresh parsley if desired. Serve hot.
Notes
Use freshly shredded Parmesan cheese for the smoothest texture. Reduce the heat before adding it and stir gradually to prevent clumping.
For a spicier soup, substitute spicy Italian sausage for mild sausage and add a pinch of crushed red pepper flakes.
For a lighter variation, replace the Italian sausage with cooked shredded chicken or use turkey sausage.
Add diced carrots, celery, mushrooms, or zucchini for extra vegetables. Sauté firmer vegetables with the onion.
Chopped kale can replace spinach, but add it earlier because it requires more cooking time.
Substitute some of the heavy cream with half-and-half for a lighter broth. Keep the heat gentle to prevent separation.
Small pasta shapes such as elbow macaroni, small shells, or orzo can replace ditalini. Adjust the cooking time accordingly.
For meal preparation, cook the pasta separately and add it just before serving to prevent it from becoming overly soft.
Store leftovers in airtight containers in the refrigerator for up to 3–4 days.
For best freezing results, freeze the soup before adding pasta and spinach. Store in freezer-safe containers for up to 2–3 months for best quality.
Reheat gently on the stovetop over medium-low heat, stirring frequently. Add a splash of chicken broth, milk, or cream if the soup becomes too thick.
For microwave reheating, heat individual portions in short intervals, stirring between intervals until thoroughly heated.
Serve with warm garlic bread, crusty Italian bread, breadsticks, or a fresh green salad.
