Description

Creamy Tuscan Chicken Pasta combines tender seasoned chicken and penne with spinach and sun-dried tomatoes in a rich garlic Parmesan cream sauce. It is a comforting, restaurant-style dinner ready in about 40 minutes.


Ingredients

12 oz penne pasta

2 boneless, skinless chicken breasts, sliced

1 tablespoon olive oil

1 tablespoon butter

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup heavy cream

1/2 cup chicken broth

3/4 cup Parmesan cheese, grated

1/2 cup sun-dried tomatoes, chopped

2 cups fresh spinach

1 tablespoon fresh parsley, chopped


Instructions

  1. Cook the penne pasta according to the package directions until al dente. Drain well and set aside.
  2. Season the sliced chicken evenly with Italian seasoning, paprika, salt, and black pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes, turning as needed, until golden and cooked through. Transfer the chicken to a plate.
  4. Melt the butter in the same skillet. Add the minced garlic and sauté for about 30 seconds, until fragrant.
  5. Pour in the chicken broth and heavy cream and stir until well combined.
  6. Gradually add the grated Parmesan, whisking until the cheese melts and the sauce is smooth and creamy.
  7. Stir in the sun-dried tomatoes and cook for about 2 minutes.
  8. Add the fresh spinach and stir until wilted.
  9. Return the cooked chicken and any accumulated juices to the skillet and stir to coat with the sauce.
  10. Add the drained penne and toss until the pasta, chicken, vegetables, and sauce are evenly combined.
  11. Simmer gently for 2–3 minutes, allowing the flavors to combine and the sauce to cling to the pasta.
  12. Garnish with chopped fresh parsley and serve hot.

Notes

Penne can be replaced with rigatoni, farfalle, fusilli, fettuccine, spaghetti, or another favorite pasta.

Add mushrooms, broccoli, asparagus, bell peppers, or zucchini for extra vegetables. Sauté firmer vegetables before preparing the sauce.

For extra heat, add a pinch of crushed red pepper flakes with the garlic.

Chicken can be replaced with cooked shrimp or turkey. For a meatless version, omit the chicken and add extra mushrooms and spinach.

For a lighter sauce, replace part of the heavy cream with additional chicken broth.

Keep the heat moderate and add the Parmesan gradually to help prevent the sauce from becoming grainy or separating.

If the sauce becomes too thick, stir in chicken broth, milk, cream, or reserved pasta water one tablespoon at a time.

Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat gently with a splash of broth, milk, or cream.

Refrigeration is preferable to freezing because cream-based sauces may separate after freezing and thawing.

Serve with a green salad, roasted vegetables, steamed broccoli, or garlic bread.
