Ingredients
2 cups cooked chickpeas, drained and rinsed
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh parsley, finely chopped
1/4 cup fresh cilantro, finely chopped
1/2 cup all-purpose flour
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon baking powder
1 tablespoon lemon juice
2 tablespoons water
3 tablespoons olive oil, plus more as needed for frying
Instructions
- Place the drained and rinsed chickpeas in a large mixing bowl. Mash with a fork or potato masher until mostly broken down, leaving a few small pieces for texture. Avoid making a completely smooth puree.
- Add the finely chopped onion, minced garlic, parsley, cilantro, flour, ground cumin, ground coriander, smoked paprika, salt, black pepper, and baking powder. Mix thoroughly until evenly combined.
- Add the lemon juice and 2 tablespoons of water. Stir until the mixture begins to hold together. If too dry, add more water 1 teaspoon at a time. If too wet, add a little extra flour.
- Scoop portions of the chickpea mixture and shape into round, slightly flattened patties approximately 2–3 inches wide and 1/2 inch thick. Press firmly so they hold together.
- Heat 3 tablespoons of olive oil in a large nonstick or well-seasoned skillet over medium heat. Allow the oil to become hot enough that a small piece of mixture sizzles gently when added.
- Carefully place the fritters in the skillet without overcrowding. Cook for 3–4 minutes on the first side until golden brown and crispy.
- Gently flip the fritters with a spatula and cook for another 3–4 minutes until both sides are golden and the centers are heated through.
- Transfer the cooked fritters to a paper towel-lined plate to absorb excess oil. Continue frying the remaining mixture in batches, adding more olive oil if necessary.
- Serve immediately while warm and crispy with tahini sauce, garlic yogurt dip, fresh lemon juice, or a Mediterranean salad.
Notes
Chickpea preparation: Drain and rinse cooked or canned chickpeas thoroughly, then pat dry to prevent excess moisture from making the fritters soggy.
Consistency tip: The mixture should hold together when pressed. Add a little flour if too wet or water if too dry. Rest the mixture for 5–10 minutes if the patties are difficult to shape.
Spicy variation: Add 1/4 teaspoon cayenne pepper or a pinch of crushed red pepper flakes for extra heat.
Cheesy variation: Mix in 1/4 cup crumbled feta cheese or grated Parmesan for a richer flavor.
Gluten-free option: Replace all-purpose flour with chickpea flour or a suitable gluten-free flour blend, adjusting moisture as needed.
Baking option: Preheat the oven to 400°F (200°C). Place the fritters on a parchment-lined baking sheet, lightly brush with olive oil, and bake for 20–25 minutes, flipping halfway through.
Air fryer option: Preheat the air fryer to 375°F (190°C). Lightly oil the fritters and air fry in a single layer for 10–14 minutes, turning halfway through.
Vegetable variation: Add finely grated carrots, zucchini, or chopped spinach. Squeeze excess moisture from zucchini before mixing.
Serving suggestions: Serve with tahini dressing, garlic yogurt sauce, tzatziki, fresh salad, sliced cucumbers, tomatoes, or warm pita bread.
Refrigeration: Store cooled fritters in an airtight container in the refrigerator for up to 3–4 days. Separate layers with parchment paper.
Freezing: Freeze cooked fritters individually on a baking sheet, then transfer to a freezer-safe container or bag. Store for up to 2–3 months.
Oven reheating: Reheat at 375°F (190°C) for approximately 8–10 minutes, or until heated through and crispy.
Air fryer reheating: Reheat at 350°F (175°C) for approximately 3–5 minutes, checking regularly to prevent over-browning.
Skillet reheating: Warm in a lightly oiled skillet over medium-low heat for a few minutes per side.
Make ahead: Prepare the chickpea mixture up to 24 hours in advance and refrigerate in an airtight container. Stir and adjust the consistency before shaping and cooking.
