These crispy garlic roasted potatoes are everything you want in a side dish: crispy on the outside, soft on the inside, and bursting with flavor. Whether you're making them to pair with a weeknight dinner or for a special occasion, they're sure to impress.

Crispy Garlic Roasted Potatoes

Ingredients

2 pounds baby potatoes, halved or quartered

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (optional, for garnish)

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

Directions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the potatoes with olive oil, minced garlic, dried rosemary, dried thyme, salt, and pepper until the potatoes are evenly coated.

Spread the potatoes in a single layer on a baking sheet, making sure they have enough space for the heat to circulate around them.

Roast in the oven for 30-40 minutes, flipping the potatoes halfway through, until they are golden brown and crispy on the edges.

Once done, remove the potatoes from the oven and garnish with freshly chopped parsley, if desired.

Serve immediately and enjoy!

Variations

Add Cheese: For a cheesy twist, sprinkle some grated Parmesan over the potatoes during the last 5 minutes of roasting.

Spicy Kick: Add a pinch of red pepper flakes or paprika to bring a little heat to the dish.

Other Herbs: Feel free to experiment with other herbs like oregano or basil if you want a different flavor profile.

Storage/Reheating

These crispy garlic roasted potatoes are best enjoyed fresh, but I understand that leftovers happen! If you have any leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, I recommend popping them back in the oven at 375°F (190°C) for about 10 minutes to crisp them up again. You can also reheat them in a skillet over medium heat.

FAQs

How do I get my roasted potatoes crispy?

The key is to make sure the potatoes are spread out in a single layer on the baking sheet and not crowded. This allows the heat to circulate around them, ensuring they become crispy on all sides. Flipping them halfway through also helps!

Can I use regular potatoes instead of baby potatoes?

Yes! You can definitely use regular potatoes; just make sure to cut them into smaller chunks so they cook evenly and become crispy.

Can I prepare the potatoes in advance?

You can prep the potatoes ahead of time by cutting them and tossing them in the seasoning mix. Just cover and refrigerate them for up to 24 hours before roasting.

Can I use fresh herbs instead of dried?

Absolutely! Fresh rosemary and thyme work great in this recipe. Just double the amount since fresh herbs are less concentrated than dried.

Can I make this dish with sweet potatoes?

Yes, sweet potatoes can be a great alternative. Keep in mind they might take a little longer to cook than regular potatoes, so you may need to adjust the roasting time.

Conclusion

These crispy garlic roasted potatoes are an easy, versatile, and flavorful side dish that will elevate any meal. With simple ingredients and straightforward steps, they’re perfect for busy weeknights or special occasions. Once you try them, I’m sure they’ll become one of your favorite go-to recipes.
