Description
These crispy lentil veggie patties sandwiches feature golden, flavorful lentil patties made with potatoes, carrots, onions, fresh parsley, and aromatic spices. Served in warm Turkish-style bread with creamy vegan tzatziki, juicy tomatoes, and tangy sumac onions, they make a hearty and satisfying plant-based meal.
Ingredients
2 cups dry green or brown lentils
1 large potato, peeled
1 onion, peeled
2 carrots, peeled
Water, as needed
Salt, to taste
1 cup breadcrumbs, plus more if needed
1 cup fresh parsley, finely chopped
1–2 teaspoons paprika
1 teaspoon ground cumin
Black pepper, to taste
Chili flakes, to taste (optional)
Oil, for shallow frying
Turkish-style bread rolls or pita bread
Tzatziki-style vegan sauce
Fresh tomato slices
Sliced onion mixed with parsley and sumac
Grilled long green peppers (optional)
Pickles (optional)
Instructions
- Place the dry lentils, peeled potato, onion, and carrots in a large pot. Add enough water to cover the ingredients and season lightly with salt. Bring to a boil, reduce the heat, and simmer for approximately 25–30 minutes until the lentils and vegetables are completely tender. Add more water if necessary.
- Drain the cooked lentils and vegetables thoroughly in a colander, removing as much excess moisture as possible. Transfer everything to a large mixing bowl and mash with a potato masher or fork, leaving a little texture.
- Add the breadcrumbs, finely chopped parsley, paprika, ground cumin, salt, black pepper, and optional chili flakes. Mix thoroughly until evenly combined and firm enough to hold together. Gradually add more breadcrumbs if the mixture is too soft or sticky.
- Divide the mixture into approximately 22 portions and shape each portion into a firm oval or rectangular patty. Press gently to help the patties hold their shape. If the mixture feels too soft, refrigerate for 15–20 minutes before frying.
- Heat a shallow layer of oil in a large skillet over medium heat. Arrange the patties in the hot oil without overcrowding. Fry for approximately 3–5 minutes per side until golden brown and crispy. Turn carefully with a spatula and transfer to a paper towel-lined plate to absorb excess oil.
- Slice the Turkish-style bread rolls or pita bread and warm them slightly. Slice the tomatoes and prepare the onion topping by combining thinly sliced onions with chopped parsley and sumac. If using long green peppers, grill them until lightly charred and tender.
- Spread a generous layer of vegan tzatziki-style sauce inside each warm bread roll. Add fresh tomato slices, the onion-parsley-sumac mixture, and 3–4 crispy lentil patties. Finish with grilled green peppers and pickles if desired. Serve immediately while the patties are warm and crispy.
Notes
Drain the lentils and vegetables thoroughly before mashing. Excess moisture can prevent the patties from holding together.
If the mixture is too soft, add extra breadcrumbs gradually or refrigerate for 15–20 minutes before shaping.
For a spicier version, increase the chili flakes and add cayenne pepper or finely chopped fresh chili.
For oven-baked patties, arrange them on a parchment-lined baking sheet, brush lightly with oil, and bake at 400°F (200°C) for 20–25 minutes, flipping halfway through.
For air fryer patties, lightly spray with oil and cook at 375°F (190°C) for 12–16 minutes, turning halfway through.
For a gluten-free variation, replace regular breadcrumbs with gluten-free breadcrumbs or certified gluten-free oats and use gluten-free sandwich bread.
For a Mediterranean-inspired sandwich, add roasted red peppers, cucumber, lettuce, and lemon-tahini sauce.
For extra herbal flavor, add fresh cilantro, dill, or mint alongside the parsley.
Canned lentils can replace dry lentils. Drain and rinse them thoroughly, cook the vegetables separately, and adjust the breadcrumbs to achieve the correct consistency.
Store cooled patties in an airtight container in the refrigerator for 3–4 days. Keep bread, sauce, and vegetables separate to prevent sogginess.
Freeze cooked, cooled patties in a single layer until firm, then transfer to a freezer-safe container with parchment paper between layers. Freeze for up to 2–3 months.
Reheat patties in a lightly oiled skillet over medium heat for a few minutes per side until heated through and crispy.
Alternatively, reheat in an oven at 375°F (190°C) for 10–15 minutes or in an air fryer at 350°F (175°C) for 4–6 minutes.
Uncooked shaped patties can be refrigerated in a covered container for up to 24 hours before frying.
Serve with potato wedges, sweet potato fries, cucumber salad, green salad, hummus, or extra vegan tzatziki sauce.
The recipe yields approximately 22 patties, enough for 5–7 sandwiches using 3–4 patties per sandwich.
Estimated nutrition is calculated per patty, excluding bread, sauce, sandwich toppings, and additional absorbed frying oil. Actual values vary depending on ingredients and preparation.
