Description
These Crispy Oven-Baked Chicken Drumsticks feature beautifully golden, crispy skin and tender, juicy meat seasoned with paprika, garlic, oregano, and smoky spices. An easy, family-friendly dinner made with simple ingredients and no deep-frying.
Ingredients
8 chicken drumsticks
2 tablespoons olive oil
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
½ teaspoon cayenne pepper (optional)
Fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and lightly grease it. For extra-crispy skin, place an oven-safe wire rack over the baking sheet.
- Pat the chicken drumsticks thoroughly dry with paper towels to remove excess moisture and help the skin become crispy.
- In a small bowl, combine the paprika, garlic powder, onion powder, dried oregano, salt, black pepper, smoked paprika, and optional cayenne pepper. Stir until evenly mixed.
- Place the dried chicken drumsticks in a large mixing bowl. Drizzle with olive oil and rub until each drumstick is evenly coated.
- Sprinkle the seasoning mixture over the chicken and rub it into all sides of each drumstick, including around the joints.
- Arrange the seasoned drumsticks in a single layer on the prepared baking sheet or wire rack, leaving space between each piece for proper air circulation.
- Bake for 40–45 minutes, turning the drumsticks halfway through cooking, until the skin is golden and crispy and the thickest part of the chicken reaches an internal temperature of at least 165°F (74°C), without touching the bone.
- For extra crispiness, switch the oven to broil during the final 2–3 minutes of cooking. Watch carefully to prevent burning.
- Remove the drumsticks from the oven and let them rest for approximately 5 minutes. Garnish with freshly chopped parsley and serve warm with your favorite side dishes.
Notes
For extra-crispy skin, thoroughly pat the drumsticks dry before seasoning and bake them on an oven-safe wire rack.
Choose drumsticks of similar size to ensure even cooking.
Keep the skin on for the best crispy texture and juicy meat.
Avoid overcrowding the baking sheet because trapped steam can soften the skin.
For spicy Cajun drumsticks, replace the original spice blend with Cajun seasoning and add extra cayenne pepper.
For honey garlic drumsticks, brush with a mixture of honey, minced garlic, and soy sauce during the final 10 minutes of baking.
For a lemon herb variation, add lemon zest, lemon juice, thyme, and rosemary to the seasoning.
For BBQ drumsticks, brush with barbecue sauce during the final 10–15 minutes of baking.
For Parmesan garlic drumsticks, add grated Parmesan cheese, extra garlic powder, and Italian seasoning.
Serve with mashed potatoes, roasted vegetables, rice, coleslaw, steamed broccoli, or a fresh garden salad.
For make-ahead preparation, season the raw drumsticks several hours in advance and refrigerate until ready to bake. Cook refrigerated raw chicken within 1–2 days.
Store cooked leftovers in an airtight container in the refrigerator for up to 3–4 days, refrigerating within 2 hours of cooking.
Freeze completely cooled drumsticks in freezer-safe containers or bags for up to 3 months for best quality.
Reheat in a 375°F (190°C) oven for approximately 15–20 minutes, until the internal temperature reaches 165°F (74°C).
Alternatively, reheat in an air fryer at 350°F (175°C) for approximately 5–8 minutes, checking that the chicken is thoroughly heated.
Microwave leftovers in short intervals until heated through, although the skin may become softer.
