Ingredients

Salt & pepper, to taste

½ teaspoon garlic powder (optional)

2 tablespoon olive oil (or vegetable oil) for frying

For the Sauce:

½ cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon honey

1 garlic clove, minced

Salt & pepper, to taste

Directions

Prepare the coating by mixing flour, salt, pepper, and garlic powder in one bowl. Beat the egg in a second bowl. Place panko breadcrumbs in a third bowl.

Coat the salmon cubes by dipping them first into the flour mixture, then into the beaten egg, and finally coat with panko breadcrumbs. I press gently to make sure the crumbs stick well.
