Ingredients
1 cup dry quinoa, rinsed
1 3/4 cups water
1 teaspoon garlic powder
1 large red bell pepper, diced
1 cucumber, diced
1 cup shredded or diced carrots
1/4 small red cabbage, finely shredded
3 scallions, thinly sliced
1/2 cup fresh cilantro, chopped
1/3 cup roasted peanuts or cashews
1 additional lime, cut into wedges
4 tablespoons peanut butter or almond butter
2 tablespoons pure maple syrup
1 teaspoon tamari or soy sauce
1-inch piece fresh ginger, finely grated
Juice of 1 lime
Salt to taste
Water, as needed to thin the dressing
Instructions
- Rinse the quinoa thoroughly under cold running water to remove its naturally bitter coating.
- Combine the rinsed quinoa, 1 3/4 cups water, and garlic powder in a medium saucepan. Bring to a boil over medium-high heat, cover, reduce the heat to low, and simmer for approximately 15 minutes, or until the liquid is absorbed.
- Remove the saucepan from the heat, fluff the quinoa gently with a fork, and allow it to cool for approximately 10 minutes before assembling the salad.
- Prepare the ginger-lime dressing by whisking together the peanut butter or almond butter, maple syrup, tamari or soy sauce, freshly grated ginger, and lime juice in a small bowl.
- Add water to the dressing, one tablespoon at a time, whisking until smooth, creamy, and pourable. Season with salt to taste and adjust the flavors as desired.
- Prepare the vegetables by dicing the red bell pepper and cucumber, shredding the carrots and red cabbage, thinly slicing the scallions, and chopping the fresh cilantro.
- Transfer the cooled quinoa to a large mixing bowl. Add the bell pepper, cucumber, carrots, red cabbage, scallions, and cilantro. Toss gently until evenly combined.
- Pour the creamy ginger-lime dressing over the quinoa and vegetables. Toss carefully with two large spoons until everything is lightly coated without crushing the vegetables.
- Divide the salad among six serving bowls. Sprinkle each portion with roasted peanuts or cashews and garnish with fresh lime wedges.
- Serve immediately or refrigerate briefly for a chilled, refreshing salad. Enjoy cold or at room temperature.
Notes
For extra plant-based protein, add crispy baked tofu, edamame, or roasted chickpeas.
For a spicy variation, stir sriracha, crushed red pepper flakes, or finely chopped fresh chili into the dressing.
Substitute cucumber or bell pepper with snap peas, shredded broccoli, or finely chopped kale for different textures.
For a nut-free version, replace peanut or almond butter with sunflower seed butter and use toasted sunflower or pumpkin seeds instead of nuts.
Add diced fresh mango for a tropical twist that complements the ginger-lime dressing.
For a gluten-free version, use certified gluten-free tamari instead of regular soy sauce and verify that the remaining ingredients are gluten-free.
Brown rice, farro, or couscous can replace quinoa, although farro and regular couscous contain gluten.
Allow the cooked quinoa to cool before mixing it with the vegetables to maintain their crisp texture.
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
For meal prep, keep the dressing and roasted nuts separate until serving to prevent sogginess and preserve crunch.
Freezing the assembled salad is not recommended because the fresh vegetables can become watery after thawing.
Plain cooked quinoa can be frozen in an airtight freezer-safe container for up to 2 months. Thaw in the refrigerator before assembling the salad.
This salad is best served cold or at room temperature. For a warm variation, gently reheat only the quinoa before adding the fresh vegetables and dressing.
Adjust the maple syrup, lime juice, and dressing consistency according to personal taste.
Preparation time does not include the optional additional chilling time.
