Description

Soft and naturally sweet cookies made with dates, oats, and crunchy walnuts for a wholesome treat. These cookies are quick to prepare and offer a cozy, nutty flavor.


Ingredients

1 cup oat flour or finely ground rolled oats

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup pitted dates, soaked in warm water for 10 minutes

1/4 cup coconut oil or olive oil

1 egg

1 tsp vanilla extract

1/2 cup chopped walnuts


Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Drain the soaked dates and blend them into a smooth paste using a food processor.
  3. In a bowl, mix the oat flour, baking soda, cinnamon, and salt.
  4. In another bowl, whisk together the date paste, oil, egg, and vanilla extract until smooth.
  5. Gradually combine the wet ingredients with the dry ingredients until a soft dough forms.
  6. Fold in the chopped walnuts evenly.
  7. Scoop small portions of dough onto the prepared baking sheet and flatten them slightly.
  8. Bake for 10 to 12 minutes, until the edges are lightly golden.
  9. Let the cookies cool on the tray for a few minutes before transferring to a wire rack.

Notes

Add a pinch of nutmeg for a warmer flavor.

Mix in dark chocolate chips, shredded coconut, or chopped almonds as variations.

Leave small date pieces for extra texture.

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.

Reheat in the microwave for 8 to 10 seconds or in a low oven until soft.

Freeze baked cookies for up to 2 months and thaw at room temperature.
