Description

This Easy Creamy Slow Cooker Fiesta Chicken combines tender shredded chicken, black beans, sweet corn, zesty tomatoes with green chilies, and a rich cream cheese sauce. Packed with bold Tex-Mex flavors, it's a comforting, versatile family dinner perfect for rice bowls, tacos, burritos, and meal prep.

Ingredients

2 pounds boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet ranch seasoning mix

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 cup low-sodium chicken broth

8 oz cream cheese, cubed

Juice of 1 lime

1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Place the boneless, skinless chicken breasts in an even layer at the bottom of a slow cooker.
  2. Add the drained and rinsed black beans, drained corn, and diced tomatoes with green chilies over the chicken. Spread the ingredients evenly.
  3. Sprinkle the ranch seasoning mix, chili powder, and ground cumin over the ingredients. Pour in the low-sodium chicken broth.
  4. Cover the slow cooker and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  5. Carefully remove the cooked chicken breasts and transfer them to a cutting board or large plate. Shred the chicken into bite-sized pieces using two forks.
  6. Add the cubed cream cheese to the hot mixture remaining in the slow cooker. Stir until the cream cheese melts and combines with the beans, corn, tomatoes, and seasoned cooking liquid to create a smooth, creamy sauce. Cover for a few additional minutes if necessary to soften the cream cheese completely.
  7. Return the shredded chicken to the slow cooker and stir gently until every piece is evenly coated with the creamy fiesta sauce.
  8. Stir in the freshly squeezed lime juice and chopped cilantro, if using. Mix until combined.
  9. Serve warm over steamed rice, inside tortillas, or with tortilla chips. Garnish with your favorite toppings, such as shredded cheese, diced avocado, sour cream, sliced green onions, jalapeños, or additional cilantro.

Notes

Serving suggestions: Serve over white rice, brown rice, or cilantro-lime rice, or use as a filling for tacos, burritos, quesadillas, and nachos. For a lighter option, serve over lettuce or cauliflower rice.

Spicy variation: Add diced jalapeños, cayenne pepper, extra chili powder, or hot diced tomatoes with green chilies for additional heat.

Extra cheesy variation: Stir in approximately 1 cup of shredded cheddar or Mexican-blend cheese after returning the shredded chicken to the slow cooker.

Lighter variation: Substitute reduced-fat cream cheese for regular cream cheese, or replace part of the cream cheese with plain Greek yogurt. Add yogurt after turning off the heat to prevent curdling.

Chicken substitution: Replace the chicken breasts with approximately 2 pounds of boneless, skinless chicken thighs. Cook until the internal temperature reaches at least 165°F (74°C).

Additional vegetables: Add diced bell peppers or onions at the beginning of cooking. Add zucchini toward the end to prevent overcooking.

Thicker sauce: Remove the slow cooker lid and allow excess moisture to evaporate briefly on HIGH. Alternatively, stir in a slurry of 1 tablespoon cornstarch mixed with 1 tablespoon cold water and heat until thickened.

Food safety: Use fully thawed chicken rather than frozen chicken breasts to ensure safe and even slow cooking.

Refrigeration: Transfer leftovers to airtight containers and refrigerate within 2 hours of cooking. Store for up to 3–4 days.

Freezing: Freeze in freezer-safe containers or resealable freezer bags for up to 2–3 months for best quality. The cream cheese sauce may separate slightly after thawing but can become smoother with gentle reheating and stirring.

Reheating: Warm leftovers in a saucepan over medium-low heat with a splash of broth or water, stirring occasionally. Alternatively, microwave in short intervals, stirring between intervals. Reheat to 165°F (74°C).

Meal prep: Divide into individual portions and store rice or tortillas separately to preserve their texture.

Optional toppings: Shredded cheddar or Mexican-blend cheese, diced avocado, sour cream, sliced green onions, fresh cilantro, jalapeño slices, crushed tortilla chips, and lime wedges.
