Description
Easy Crockpot Chicken and Potatoes is a comforting one-pot dinner featuring tender chicken breasts, buttery baby potatoes, garlic, onions, and savory Italian herbs slow-cooked in a flavorful broth. Perfect for busy weeknights and satisfying family meals with minimal preparation.
Ingredients
4 boneless, skinless chicken breasts
1 1/2 pounds baby potatoes, halved
3 cloves garlic, minced
1 small onion, sliced
1 cup chicken broth
2 tablespoons olive oil
1 teaspoon Italian seasoning
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
- Wash the baby potatoes and cut them in half. Thinly slice the onion. Arrange the potatoes and sliced onion in an even layer at the bottom of the crockpot.
- In a small bowl, combine the Italian seasoning, paprika, garlic powder, onion powder, salt, and black pepper. Sprinkle the seasoning mixture evenly over both sides of the chicken breasts.
- Place the seasoned chicken breasts over the potatoes and onions, arranging them in a single layer for even cooking.
- Scatter the minced garlic over the chicken and potatoes. Drizzle the olive oil evenly over the chicken.
- Slowly pour the chicken broth around the chicken and potatoes, avoiding pouring it directly over the chicken so the seasonings remain in place.
- Cover the crockpot with its lid and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are fork-tender and the chicken reaches an internal temperature of 165°F (74°C). Check toward the beginning of the recommended cooking window to prevent overcooking.
- Sprinkle freshly chopped parsley over the cooked chicken and potatoes. Spoon some of the flavorful cooking broth over each serving and serve warm.
Notes
Potato selection: Baby Yukon Gold or red potatoes work especially well because they hold their shape during slow cooking. Leave the skins on for additional texture.
Chicken thighs: Substitute boneless, skinless chicken thighs for chicken breasts for a slightly richer flavor and tender texture.
Creamy variation: Stir in a little heavy cream during the final 20–30 minutes of cooking to create a creamy sauce.
Garlic butter variation: Replace the olive oil with melted butter and add an extra clove of minced garlic.
Lemon herb variation: Add fresh lemon juice, lemon zest, thyme, or rosemary near the end of cooking for a brighter flavor.
Extra vegetables: Add carrots, mushrooms, green beans, or peas. Place firm vegetables near the bottom and add delicate vegetables toward the end of cooking.
Spicy variation: Add red pepper flakes, cayenne pepper, or chili powder to the seasoning mixture according to taste.
Food safety: Always use completely thawed chicken and verify that the thickest part reaches 165°F (74°C).
Make ahead: Prepare the potatoes, onion, and seasonings in advance. Refrigerate raw chicken separately and assemble the ingredients immediately before cooking.
Refrigeration: Transfer leftovers to airtight containers within two hours of cooking and refrigerate for up to 3–4 days. Add some cooking broth to keep the chicken moist.
Freezing: Freeze cooled portions in freezer-safe containers for up to 2–3 months for best quality. Potatoes may soften slightly after thawing.
Reheating: Reheat with a splash of chicken broth in the microwave, a covered skillet, or a 350°F (175°C) oven until the center reaches 165°F (74°C).
Serving suggestion: Serve with steamed green vegetables, a fresh garden salad, or crusty bread to soak up the savory cooking broth.
