- Roll the puff pastry out slightly and cut it into equal-sized squares.
- Place a small spoonful of lemon pie filling or lemon curd into the center of each square.
- Fold or shape each pastry as desired and gently seal the edges.
- Whisk together the egg and water to make an egg wash, then brush it over the tops of the pastries.

- Allow the pastries to cool for about 10 minutes.
- Whisk together the powdered sugar, fresh lemon juice, and lemon zest until smooth.

Notes
Substitute homemade lemon curd for canned lemon pie filling for a richer flavor.
Add raspberry or strawberry preserves with the lemon filling for a fruity variation.
Mix a little vanilla or almond extract into the glaze for extra flavor.
Sprinkle coarse sugar or sliced almonds on top before baking for added texture.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in a 325°F (165°C) oven or air fryer for 4 to 6 minutes to restore crispness.
Freeze baked, unglazed pastries for up to 2 months and glaze after reheating.
