Description

A colorful and refreshing dessert featuring a soft sugar cookie crust, creamy honey-sweetened cream cheese frosting, and a vibrant assortment of fresh fruit. Perfect for parties, summer gatherings, or an easy make-ahead treat.


Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup packed light brown sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon almond extract

8 ounces cream cheese, softened

3 tablespoons honey or maple syrup

1 teaspoon vanilla extract

Pinch of salt

2 cups fresh mixed fruit, sliced

Honey for drizzling (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 12-inch pizza pan or a 9×13-inch baking dish.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. In a separate bowl, beat the softened butter and brown sugar until light and fluffy.
  4. Mix in the egg, vanilla extract, and almond extract until fully combined.
  5. Gradually add the dry ingredients and stir just until a soft dough forms.
  6. Press the dough evenly into the prepared pan and poke several holes with a fork.
  7. Bake for 15 to 18 minutes, or until lightly golden around the edges. Cool completely.
  8. Beat together the cream cheese, honey or maple syrup, vanilla extract, and a pinch of salt until smooth and creamy.
  9. Spread the frosting evenly over the cooled cookie crust.
  10. Arrange the sliced fresh fruit over the frosting.
  11. Drizzle with honey if desired, then slice and serve chilled.

Notes

Use seasonal fruits such as strawberries, blueberries, kiwi, raspberries, grapes, peaches, mandarin oranges, or mango.

Add lemon or orange zest to the frosting for a citrus flavor.

Top with toasted coconut, chopped pistachios, or sliced almonds for extra texture.

Prepare the crust a day ahead and add the frosting and fruit before serving.

Store covered in the refrigerator for up to 3 days. Do not freeze.

For a gluten-free version, substitute a gluten-free all-purpose flour blend.
