Ingredients

8 oz lo mein noodles

2 tbsp vegetable oil

1 lb chicken breast, thinly sliced

3 cloves garlic, minced

2 cups mixed vegetables (carrots, bell peppers, broccoli)

1/4 cup soy sauce

2 tbsp oyster sauce

1 tbsp hoisin sauce

1 tsp sesame oil

Salt and pepper, to taste

Green onions, sliced (for garnish)

Instructions

  1. Cook lo mein noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat 1 tbsp of vegetable oil over medium-high heat. Add the chicken slices and cook until browned and fully cooked. Remove the chicken and set aside.
  3. Add the remaining oil to the skillet and sauté the minced garlic for about 1 minute. Add the mixed vegetables and stir-fry until tender-crisp.
  4. In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, and sesame oil.
  5. Add the cooked chicken, noodles, and sauce to the skillet with the vegetables. Toss everything together and stir-fry for 2-3 minutes, ensuring the noodles are well coated.
  6. Season with salt and pepper to taste. Garnish with sliced green onions and serve immediately.

Notes

Protein Swap: Try swapping the chicken for beef, shrimp, or tofu for a different twist on this dish.

Vegetable Variations: Feel free to swap vegetables such as snow peas, zucchini, or mushrooms based on your preferences.

Spicy Kick: Add crushed red pepper flakes or sriracha to the sauce for some extra heat.

Storage/Reheating: Store leftovers in an airtight container in the fridge for up to 2-3 days. Reheat by stir-frying in a skillet with a little splash of soy sauce or water if needed.
