Ingredients

For the Glazed Salmon:

4 salmon fillets

Chef Bae All Purpose Seasoning, to taste

Black pepper, to taste

1 tablespoon olive oil

2 tablespoons butter

¼ cup brown sugar

3 tablespoons honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

2 garlic cloves, minced

Dried parsley, for garnish

For the Creamy Mashed Potatoes:

2 pounds russet potatoes, peeled and cut into chunks

4 tablespoons butter

½ cup heavy cream, warmed

Chef Bae All Purpose Seasoning, to taste

Black pepper, to taste

For the Buttery Green Beans:

1 pound green beans, trimmed

2 tablespoons butter

Chef Bae All Purpose Seasoning, to taste

Black pepper, to taste

For the Corn Muffins:

1 cup cornmeal

1 cup all-purpose flour

¼ cup granulated sugar

1 tablespoon baking powder

1 cup buttermilk

1 large egg

⅓ cup butter, melted

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a 12-cup muffin pan and set aside.
  2. Prepare the corn muffin batter by combining the cornmeal, all-purpose flour, granulated sugar, and baking powder in a large mixing bowl. Add the buttermilk, egg, and melted butter. Stir gently until just combined, avoiding overmixing.
  3. Divide the batter evenly among the prepared muffin cups. Bake for 15 to 18 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool slightly.
  4. Place the peeled and chopped russet potatoes in a large pot and cover with water. Bring to a boil and cook for 15 to 20 minutes, until fork-tender. Drain thoroughly.
  5. Mash the drained potatoes until smooth. Add 4 tablespoons butter and the warmed heavy cream. Season with Chef Bae All Purpose Seasoning and black pepper. Stir gently until creamy and fluffy. Cover and keep warm.
  6. Bring a separate pot of water to a boil. Add the trimmed green beans and cook for 5 to 7 minutes, until tender-crisp. Drain well and toss with 2 tablespoons butter, Chef Bae All Purpose Seasoning, and black pepper. Keep warm.
  7. Pat the salmon fillets dry with paper towels. Season both sides with Chef Bae All Purpose Seasoning and black pepper.
  8. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the salmon fillets and sear for 4 to 5 minutes on the first side. Flip carefully and cook for another 3 to 5 minutes, depending on thickness, until the internal temperature reaches 145°F (63°C). Transfer the salmon to a plate.
  9. Reduce the skillet heat to medium. Add 2 tablespoons butter, brown sugar, honey, soy sauce, Dijon mustard, and minced garlic. Stir until the butter melts and the sugar dissolves. Simmer gently for 2 to 3 minutes, stirring frequently, until the glaze becomes glossy and slightly thickened.
  10. Return the cooked salmon fillets to the skillet. Spoon the warm honey garlic glaze generously over each fillet and heat briefly without overcooking. Sprinkle with dried parsley.
  11. Arrange one glazed salmon fillet on each serving plate with creamy mashed potatoes and buttery green beans. Add warm corn muffins and drizzle any remaining glaze over the salmon. Serve immediately.

Notes

Spicy variation: Add red pepper flakes, cayenne pepper, or a dash of hot sauce to the honey garlic glaze for extra heat.

Lemon garlic variation: Add a squeeze of fresh lemon juice to the glaze just before serving for a brighter flavor.

Garlic Parmesan mashed potatoes: Stir roasted garlic and freshly grated Parmesan cheese into the mashed potatoes for additional savory flavor.

Southern-style green beans: Sauté diced onions and garlic before adding the cooked green beans. Cooked, crumbled bacon can also be added for smoky flavor.

Cheddar corn muffins: Add shredded cheddar cheese to the muffin batter for a savory twist.

Maple glaze: Replace the honey with maple syrup for a warm, caramel-like sweetness.

Frozen salmon: Thaw frozen salmon completely in the refrigerator before cooking. Pat dry to encourage even browning.

Prevent dry salmon: Use a food thermometer and cook salmon to an internal temperature of 145°F (63°C). Add the glaze near the end to prevent burning.

Mashed potato substitution: Replace heavy cream with warmed whole milk or half-and-half for a lighter consistency.

Make ahead: Bake the corn muffins in advance, trim the green beans, and prepare the glaze ingredients ahead of time. Cook the salmon fresh for the best texture.

Refrigeration: Store cooled salmon, mashed potatoes, green beans, and corn muffins in separate airtight containers in the refrigerator for up to 3 to 4 days. Refrigerate within 2 hours of cooking.

Freezing: Freeze cooked salmon for 2 to 3 months for best quality. Corn muffins can be frozen individually wrapped. Mashed potatoes may also be frozen, although their texture can change after thawing.

Reheating salmon: Warm gently in a covered oven-safe dish at 275°F (135°C) with a splash of water or extra glaze until the center reaches 165°F (74°C).

Reheating potatoes: Warm over low heat with a splash of milk or cream, stirring occasionally until heated throughout to 165°F (74°C).

Reheating green beans: Warm in a skillet over medium-low heat with a little butter until thoroughly heated.

Reheating corn muffins: Wrap loosely in foil and warm in a 300°F (150°C) oven for 8 to 10 minutes. Brush with melted butter if desired.

Serving suggestion: Serve the salmon and sides immediately while the glaze is glossy, the potatoes are fluffy, and the corn muffins are warm.
