Ingredients
1½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
1 fresh pineapple, peeled, cored, and cut into chunks
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 red onion, cut into chunks
1/4 cup soy sauce (or tamari for gluten-free)
1/4 cup honey (or maple syrup for vegan option)
2 tablespoons olive oil
1 tablespoon apple cider vinegar
2 cloves garlic, minced
1 teaspoon grated fresh ginger
Salt and pepper to taste
Bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together soy sauce, honey, olive oil, apple cider vinegar, garlic, ginger, salt, and pepper to create the marinade.
- Place the chicken cubes in a resealable bag or bowl and pour in half of the marinade. Refrigerate for at least 30 minutes or up to 4 hours.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, pineapple chunks, bell peppers, and red onion onto soaked bamboo skewers, alternating ingredients for variety.
- Grill the kebabs for 10–12 minutes, turning occasionally, and brush with remaining marinade during the last few minutes of grilling.
- Remove kebabs from the grill and let them rest for 2–3 minutes before serving.
Notes
Use chicken thighs for a juicier texture if desired.
For a vegetarian version, substitute chicken with tofu or portobello mushrooms.
Add vegetables like zucchini or cherry tomatoes for extra color and nutrients.
Include red pepper flakes or hot sauce in the marinade for a spicier version.
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat in oven at 350°F or in a skillet; avoid over-microwaving to prevent drying out.
These kebabs are also great cold over a salad.
