Description

These Halloween Deviled Eggs turn a classic creamy appetizer into festive pumpkins, spooky eyeballs, and creepy spiders. They are easy to make ahead and perfect for Halloween parties and snack tables.


Ingredients

12 large eggs

1/2 cup mayonnaise

2 teaspoons Dijon mustard

1 teaspoon white vinegar

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt to taste

Black pepper to taste

Orange food coloring

Green food coloring

12 black olives

Fresh chives

Paprika for garnish


Instructions

  1. Place the eggs in a saucepan, cover completely with cold water, and bring to a boil. Turn off the heat, cover the saucepan, and let the eggs stand for 12 minutes.
  2. Transfer the eggs immediately to an ice bath and cool completely. Peel the eggs and slice each one in half lengthwise.
  3. Carefully remove the yolks and place them in a medium bowl, keeping the egg whites intact.
  4. Mash the yolks with the mayonnaise, Dijon mustard, white vinegar, garlic powder, smoked paprika, salt, and black pepper until creamy and smooth.
  5. Divide the filling evenly among three small bowls. Leave one portion natural, tint one portion orange, and tint the remaining portion green with food coloring.
  6. Spoon or pipe the fillings into the hollow centers of the egg whites.
  7. For pumpkin eggs, use orange filling and add small pieces of fresh chives at the top for stems.
  8. For eyeball eggs, use the plain filling and arrange pieces or slices of black olives on top to create pupils and spooky details.
  9. For spider eggs, use the green filling and arrange black olive pieces into spider bodies and thin legs.
  10. Lightly sprinkle some of the eggs with paprika. Refrigerate for at least 20 minutes before serving.

Notes

For monster deviled eggs, tint the filling bright green and decorate with black olive pieces to create faces.

For extra heat, mix hot sauce or cayenne pepper into the yolk filling.

For natural coloring, use a small amount of beet juice for pink or red tones or finely blended herbs for green tones.

For extra smoky flavor, add another pinch of smoked paprika to the filling.

Eggs and filling can be prepared ahead and refrigerated separately, then assembled and decorated closer to serving.

Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days after cooking the eggs. For best appearance and texture, serve within 1 to 2 days.

Do not freeze or reheat deviled eggs; serve them chilled.
