Description

This Healthy Cookie Dough Bark is a simple no-bake dessert with a soft, chewy cookie dough base and a rich chocolate topping. It's made with wholesome ingredients and is perfect for a satisfying snack or freezer-friendly treat.


Ingredients

1 1/2 cups almond flour

1/4 cup cashew butter or peanut butter

1/4 cup maple syrup

2 tablespoons melted coconut oil

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup chocolate chips

1 cup chocolate chips

1 teaspoon coconut oil

Flaky sea salt, optional


Instructions

  1. In a large mixing bowl, combine the almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until a smooth cookie dough forms.
  2. Fold in the 1/4 cup chocolate chips until evenly distributed.
  3. Line a cutting board or large plate with parchment paper and press the dough into an even layer about 1/2 inch thick.
  4. Place the remaining 1 cup chocolate chips and 1 teaspoon coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until fully melted and smooth.
  5. Pour the melted chocolate over the cookie dough layer and spread evenly with a spatula.
  6. Sprinkle with flaky sea salt if desired.
  7. Freeze for about 10 minutes, or until the chocolate is firm.
  8. Remove from the freezer and break or chop into 12 pieces before serving.

Notes

Substitute almond butter, peanut butter, or sunflower seed butter for the cashew butter as desired.

Add chopped nuts or unsweetened shredded coconut for extra texture.

Use dark or dairy-free chocolate chips if preferred.

Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months with parchment between layers.

Enjoy chilled or let frozen pieces sit at room temperature for a few minutes before serving.
