Description
Hero Cookies are rich, buttery chocolate chip cookies with lightly crisp golden edges, thick, soft and chewy centers, and plenty of melted chocolate. These easy bakery-style cookies come together in just 27 minutes without chilling the dough.
Ingredients
1 cup unsalted butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
2 cups semisweet chocolate chips or chunks
Instructions
- Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- In a large mixing bowl, combine the softened unsalted butter, light brown sugar, and granulated sugar. Beat with a hand mixer or stand mixer until light, creamy, and well combined.
- Add the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until smooth.
- In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until evenly combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until a soft cookie dough forms. Avoid overmixing.
- Using a spatula, gently fold in the semisweet chocolate chips or chunks until evenly distributed throughout the dough.
- Scoop approximately 2 tablespoons of dough per cookie and arrange the portions on the prepared baking sheets, leaving about 2 inches between each cookie. For a bakery-style appearance, press a few extra chocolate chips onto the tops if desired.
- Bake for 10–12 minutes, until the edges are lightly golden and the centers still look slightly soft. Avoid overbaking, as the cookies will continue to set while cooling.
- Remove the baking sheets from the oven and allow the cookies to rest on the trays for approximately 5 minutes. Transfer them carefully to a wire rack to cool further.
- Serve slightly warm for soft centers and melted chocolate, or allow the cookies to cool completely for a chewier texture.
Notes
For thicker cookies, refrigerate the dough for 30–60 minutes before baking. Shape the dough into slightly taller mounds to reduce spreading.
For double chocolate cookies, replace 1/4 cup of the all-purpose flour with unsweetened cocoa powder.
For white chocolate macadamia cookies, replace the semisweet chocolate chips with white chocolate chips and add chopped macadamia nuts.
For salted chocolate chip cookies, sprinkle a small amount of flaky sea salt over the cookies immediately after baking.
For chocolate chip walnut cookies, replace some of the chocolate chips with chopped walnuts or pecans.
For a deeper chocolate flavor, substitute dark chocolate chunks for semisweet chocolate chips.
Use softened butter rather than melted butter to prevent excessive spreading. Measure flour carefully and avoid placing dough on hot baking sheets.
Do not overmix the dough after adding the flour, as this can produce tougher cookies.
For soft, chewy cookies, remove them from the oven when the edges are lightly golden and the centers still appear slightly underdone.
Store completely cooled cookies in an airtight container at room temperature for 4–5 days. A small piece of bread placed separately inside the container can help maintain softness.
Refrigerate baked cookies in an airtight container for up to 1 week. Bring to room temperature or warm briefly before serving.
Freeze baked cookies in a freezer-safe container with parchment paper between layers for up to 3 months. Thaw at room temperature.
Freeze individual portions of unbaked cookie dough for up to 3 months. Bake directly from frozen at 350°F (175°C), adding approximately 2–4 minutes to the baking time.
Prepared cookie dough can be refrigerated in a tightly covered container for up to 3 days. Let it soften briefly at room temperature if it becomes difficult to scoop.
To reheat one cookie, microwave for 8–12 seconds. For several cookies, warm in a 300°F (150°C) oven for 3–5 minutes.
Serve warm with a glass of milk, pack for lunchboxes, or enjoy as a homemade dessert for parties, holidays, and family gatherings.
