Description
A juicy Italian-inspired meatloaf made with ground beef, Parmesan, garlic, herbs, and marinara, then topped with melted mozzarella. It is a hearty, cheesy comfort-food dinner with plenty of savory flavor.
Ingredients
2 pounds ground beef
1 cup Italian-style breadcrumbs
2 large eggs
1/2 cup grated Parmesan cheese
1 small onion, finely diced
3 cloves garlic, minced
1/4 cup whole milk
2 tablespoons chopped fresh parsley
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce, divided
1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or line a rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the ground beef, Italian-style breadcrumbs, eggs, Parmesan, onion, garlic, milk, parsley, oregano, basil, salt, black pepper, and 1/2 cup marinara sauce.
- Gently mix just until the ingredients are evenly combined, taking care not to overmix.
- Shape the meat mixture into a loaf and place it in the prepared loaf pan or on the lined baking sheet.
- Spread the remaining 1/2 cup marinara sauce evenly over the top of the meatloaf.
- Bake for 45 minutes.
- Remove the meatloaf from the oven and sprinkle the shredded mozzarella over the top. Return it to the oven and bake for another 10–15 minutes, until the cheese is melted and the center of the meatloaf reaches 160°F (71°C).
- Let the meatloaf rest for about 10 minutes before slicing and serving.
Notes
Avoid overmixing the meat mixture, as this can make the meatloaf dense or tough.
For extra heat, add crushed red pepper flakes or use spicy marinara sauce.
For a cheese-filled center, add small cubes of mozzarella to the middle of the loaf before baking.
Part of the ground beef can be replaced with ground turkey for a lighter variation.
Finely chopped bell peppers, mushrooms, or well-drained grated zucchini can be added for extra vegetables.
Store cooled leftovers in an airtight container in the refrigerator for up to 3–4 days.
Individual slices can be wrapped well and frozen for longer storage.
Reheat covered at 350°F (175°C) with a spoonful of marinara sauce, or microwave individual slices in short intervals until heated through.
Serve with mashed potatoes, roasted vegetables, pasta, garlic bread, or a green salad.
