Description

A creamy, cheesy, and protein-packed keto chicken broccoli casserole made with tender chicken, fresh broccoli, and a savory sauce. Perfect for low-carb diets, easy dinners, and meal prep.


Ingredients

4 cups cooked chicken breast, shredded or chopped

4 cups fresh broccoli florets

1 1/2 cups shredded cheddar cheese

4 oz cream cheese, softened

1/2 cup sour cream

1/4 cup mayonnaise

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. Steam or blanch the broccoli florets for 3–4 minutes until slightly tender but still firm. Drain and set aside.
  3. In a large bowl, mix cream cheese, sour cream, mayonnaise, garlic powder, onion powder, salt, black pepper, and red pepper flakes until smooth.
  4. Add shredded chicken, steamed broccoli, and 1 cup of cheddar cheese to the mixture. Stir until evenly combined.
  5. Transfer the mixture to the prepared baking dish and spread it out evenly.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
  7. Bake uncovered for 20–25 minutes, until the top is golden and bubbly.
  8. Let the casserole rest for 5 minutes before serving.

Notes

Use rotisserie or leftover grilled chicken for convenience.

Swap broccoli with cauliflower for variation.

Add cooked bacon or jalapeños for extra flavor.

Can be made a day ahead and baked later.

Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
