Description

These Lemon Crumb Bars feature a buttery oat crumble crust and topping layered with a creamy, tangy lemon filling. The balance of sweet and citrus flavors makes them a refreshing dessert for any occasion.


Ingredients

1 cup quick-cooking oats

1 1/2 cups all-purpose flour

1 cup light brown sugar, packed

1/4 teaspoon baking soda

1/4 teaspoon baking powder

3/4 cup unsalted butter, melted

1 can sweetened condensed milk

1/2 cup freshly squeezed lemon juice

2 large egg yolks

1 teaspoon lemon zest

1/8 teaspoon kosher salt


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
  2. In a large bowl, combine the oats, flour, brown sugar, baking powder, and baking soda.
  3. Add the melted butter and mix until the mixture becomes crumbly and evenly combined.
  4. Reserve about 2 cups of the crumble mixture for the topping.
  5. Press the remaining crumble mixture firmly into the bottom of the prepared pan.
  6. Bake the crust for 12 to 15 minutes until lightly golden. Remove from the oven and let cool slightly.
  7. In a separate bowl, whisk together the sweetened condensed milk, lemon juice, egg yolks, lemon zest, and salt until smooth.
  8. Pour the lemon filling evenly over the baked crust.
  9. Sprinkle the reserved crumble mixture evenly over the filling.
  10. Bake for 20 to 25 minutes until the edges are golden and the center is set.
  11. Cool completely, then refrigerate for at least 55 minutes before slicing and serving.

Notes

Add extra lemon zest for a stronger citrus flavor.

Mix shredded coconut into the crumble topping for added texture.

Substitute lime juice and lime zest for a different citrus variation.

Add white chocolate chips to the crumble mixture for extra sweetness.

Dust with powdered sugar before serving for an elegant presentation.

Store in an airtight container in the refrigerator for up to 5 days.
