A soft, airy cake that's as light as a cloud and perfect for any occasion. This melt-in-your-mouth Light & Fluffy Cloud Cake is a delightful combination of sweetness and lightness, making it the perfect dessert for those who love a delicate texture.

Light & Fluffy Cloud Cake

Ingredients

1 cup all-purpose flour

½ cup granulated sugar

½ teaspoon baking powder

¼ teaspoon salt

4 large eggs, separated

¼ cup unsweetened applesauce

1 teaspoon vanilla extract

½ cup milk

¼ teaspoon cream of tartar

¼ cup powdered sugar

Directions

I preheat the oven to 325°F (163°C) and grease and flour an 8-inch round cake pan.

In a medium bowl, I sift together the flour, sugar, baking powder, and salt. I set this aside.

In another large bowl, I whisk the egg yolks, applesauce, vanilla extract, and milk until smooth.

Gradually, I fold the dry ingredients into the wet mixture, mixing gently until well combined. I set this mixture aside.

In a separate bowl, I beat the egg whites and cream of tartar with an electric mixer until soft peaks form. I then gradually add in the powdered sugar and continue to beat until stiff peaks form.

Carefully, I fold the egg whites into the batter in three additions, being mindful not to deflate the air bubbles in the whites.

I pour the batter into the prepared cake pan and smooth the top.

I bake the cake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

After baking, I let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
